Question on Suet/Tallow and freezing

So I’ve been buying my Tallow online in 8lb buckets for $35 which isn’t terrible but still not great @4.30/lb. After calling and going to every butcher shop in my metro area I found a meat distributor that can get me suet for $1.30/lb which is awesome (40lb case) so question is can you freeze it as suet or tallow after I render it? I’m sure there’s some loss after the rendering but figured 40lbs or whatever is left should last a while, I fry a lot, but still.

You can indeed freeze them. However, I thought that tallow rendered correctly shouldn’t go rancid at room temperature? You could freeze in silicone trays and that way you have an easy source of grab and use sizes.
