I’ve just spent the last couple of days turning a couple of hog’s heads into this. To make it extra fatty, I chop up the jowls and skin as well.

My GF’s family serves it on Xmas Eve. Never had the guts to try it.
Looks too much like lime jello marshmallow cottage cheese surprise for me LOL. Perhaps I have been missing out?

It’s awesome. It’s also amazing how little you have to eat to be sated. It is a process, which is why I like to do two heads at a time. Two heads yield about 12 of those foil loaf pans, so there’s plenty to freeze. Unfrozen, it lasts about a week in the fridge, so there’s plenty of time to eat it. It usually gets eaten long before that.
