Have you ever tried this ? Much more tender than pork tenderloin, and even a little cheaper. So my local Walmart has these little 1 1/2 to 2’lb’ish Pork Ribeye Roasts for only like $5. I use them for breakfasts, and slice them about 3/8" thick. Cook on medium low heat, being careful not to over cook them (the only thing that will make them dry and tough)
And yes, it is much leaner than bacon… But that’s not a problem I also throw in about 1/3 a stick of butter Between the butter, and the juices that cook out, it makes a fantastic gravy to pour over the top of the pork, and my 3 or 4 eggs Bam ! I’m good until dinner
Lately I have been back and forth between this, and Salmon.
Oh, and I guess for those of you weird people that don’t eat breakfast (JK ) you could do this for lunch or dinner too.
