Pork belly burrito

So a couple days ago we made 2 lbs of pork belly. And man was it good. However. After eating it for 3 days straight I was getting tired of it and the need to use forks and knives. So I made a quick decision to throw it in a food processor and chop it right down into something I could stuff in a low carb burrito. When I took my first bite my mind was blown at the fact that now that the fat and meat were chopped down, it had a meat and bean texture. Inside of the tortilla shell with some hot sauce was world opening as burritos are one of the things I definitely miss most. So if I were going to make this a actual recipe instead of a happy accident I woukd

Cook and sauce pork belly in your favourite Tex Mex seasonings
Chop in a food processor
Make some cauliflower rice
Fathead taco shell
Add taco toppings like salsa guacamole and cheese
Enjoy
