Peppery Coleslaw

A delicious way to brighten a winter meal or cool a summer dinner

1 1/2 Tbsp Swerve confectioner (my pre-keto recipe included 3 tbsp sugar, sweeten to your level). Confectioner crystal size will dissolve more.
3 tbsp apple cider vinegar (ACV)
2 tbsp mustard
3 tbsp lemon juice
1 tbsp salt
1 tbsp ground pepper
1 1/2 cup mayo
16 cups shredded green and red cabbage (works well with Costco or Sam’s 2 lb (907 g) shredded cabbage)

Mix sweetener and ACV to dissolve, some sweetners will not fully dissolve. Blend all ingredients except cabbage, refrigerate for a few hours to let the pepper develope. Mix into the cabbage and refrigerate at least 30 minutes.

We usually start with the vinegar in a bowl and then add the sweetener slowly to get it to dissolve in the vinegar. Once that is done, we add the mayo to make the dressing and then add the cabbage (or coleslaw mix from sams).

We basically just do the vinegar, sweetner and mayo. Salt and pepper to taste.

I did this with ACV too and didn’t include the nuance in the original post, I will update it :blush:

Add a bit more pepper then, I rate this as peppery for a crowd, I add extra pepper if our kids are not eating it :blush::wink:
