I wanted to share with you this wonderful traditional sausage named “caltabos”.
It is basically minced pork organ meat with fat, it has liver, kidneys heart, lungs, and meat from the face and other places from the pig + plus lard (and salt, peper and some onion and garlic).
I searched for a translation of the recipe in eng, did not quite find any.
