So my duckies reproduced like rabbits this summer…every time we thought we’d lost a couple to coyotes, they’d show up a week later trailing 10-12 fuzzy little babies. So we culled the herd a bit, and now have a bunch of freezer duck.
I tossed a couple into my slow cooker this morning, along with some thyme sprigs, onion, garlic, salt, pepper. Set it to low for 10 hrs.
WOW! Duck Fat!!! Started by dipping some Keto bread into it, ended up sipping it straight. A-maze-ing.
So now that I have several cupfuls lurking in the bottom of my slow cooker, what else can I do with it? Is it stable, like rendered lard or tallow? Or do I need to do something more to make it so?

I use it to fry chicken. Last batch I made was a mix of duck and bacon fat. Really good…
Somehow the rapid progression from “fuzzy little babies” to “culled the herd a bit” just made me nauseated.
Sorry about that…I actually got rid of some of the adult males. Now I sound sexist… but males don’t lay eggs (the reason we have ducks) and they (the males) can be hard on the ladies. And, no males, no babies… not sure if I assuaged your nausea or made it worse. But, pasture raised organic ducks in my freezer are a good thing!
Whew! That’s a little better. I remember trying duck and goose eggs a long time ago before I was keto and thinking they were too rich. Now I wish I had access to them again to see what’s changed. I hear they’re fantastic for quiche and the like.
The surest way to know the animals feeding you were not abused is to raise them yourself.
I want some of these geese! I have Tolouse (big gray geese with orange beaks) but the only babies to hatch after 3 years are all male. Need more girls. But the eggs are awesome! I sub 1 goose egg for 3 large chicken eggs in recipes. Custard/pastry cream made with duck or goose egg is…divine.
I called those things Velociraptors for good reason. The goslings are cute and amiable for all of a month, then they turn into Satan’s minions. They run if you come at them but turn your back and they’ll take a chunk of ass flesh faster than you can say, “Pass the salt.” She also had a few Dewlap geese which were far more docile and adorable.
That is soooo funny!!! I have a baby turkey that has my big golden retriever terrified. He goes after the dogs tail & pulls out hairs, then runs at his face while yelling something like Tschuk! Tschuk!
As long as you keep it in a closed up container away from light and air, it should last a very long time outside of the fridge. That being said, I keep fats in the fridge because I always have.
Fry up some radishes or jicama slices in that stuff, yummy. Anything fried in it will rich and tasty. I used to use duck and goose fat for potatoes, but not using them now. Play around with different veggies. Also cook up kale, collards, or mustard greens with some of that stuff. It will be awesome.

Yep!!! Indeed. My work place had to hire a trainer and two working dogs to chase the Canada geese away from the area for employee safety. LOL. Glad it worked.
Geez, I know. Sometimes I have to fight the urge to haul back and punt them like footballs.
My friend with the Velociraptors got an attack dog to protect them from coyotes. It attacked me. We aren’t friends anymore.
Here in Fla, we have muscovy ducks. Talk about vicious. A few years ago I was taking a morning walk and suddenly one of those bastards flew at the back of my head. Then swooped around and did it again! I’ve disliked them since.
Funny, the geese I’ve met certainly don’t need protection. In fact, I was once advised to get some geese, in order to protect a flock of turkeys from coyotes.
She claimed the coyotes were snackin’ at her place regularly but rather than build a proper perimeter fence, which she could definitely afford, she opted for Cujo and guns.
She had a weird relationship with animals, they were very utilitarian in her world and rather disposable, even her pets. Cold, very cold. (shudder)

Duck fat makes the best omelettes and fried chicken.
Not as stable as beef tallow, needs to be refrigerated or frozen for long term storage.
