Oh My God Pork Belly

How have I lived without this deliciousness all my life?! I made and ate pork belly for the first time ever tonight, using Richard’s recipe (with some adjustments). This may well become my new obsession. Now that I know how amazing it is doing a half-good job on my first try, I’m going to have to just keep going till I make the best pork belly ever!!
Edit: I should note this was being shared, hence all the not-really-keto veggies.

@KetoToronto, did you buy the pork belly frozen? My butcher only sells pork belly frozen and I’m wondering how that will affect the outcome.

As long as it stays solidly frozen and doesn’t go through partial thawing and refreezing it should be fine. Airtight packaging such as vacuum sealing is also very helpful in preventing freezer burn.

I bought it fresh, but @brownfat sounds like he knows what he’s talking about.
