I’ve been making endless variations, it’s hard to mess up, since @Daisy posted this recipe:

It travels well. Keeps several days in the fridge and freezes well. I make a big loaf every 2 or 3 weeks, slice it thin and freeze most of it. It has eliminated my desire to eat conventional breads.

I use https://cronometer.com/ and enter in my ingredients weighed in grams. In addition to macros it gives many micros such as vitamins and minerals as well as breakdowns of the macros, such as sugars, starch and fiber for carbs, the amino acids of protein and classes of fatty acids of fats.

It looks terrific and worth making a batch!

Something is off in the net carb count in Todd and Daisy link. Total carbs 6.4g - Fiber 3.9g = 2.5g Net carbs. Not 0.7g. ?

I freeze chunks of this stuff and thaw out as I need them. You can slice real thin and toast the slices to make crackers too.

Yes thats what I thought! Its robust though - can get half a pound of cheese on 1 slice!

Using hemp seeds, chia, macadamias and dumping the sunflower seeds and maybe the pumpkin seeds too would be more keto friendly. My bag of sunflower seeds shows too many carbs for me. So they just sit in my cupboard. I see many conflicting carb counts on pumpkin seeds so avoid them too.

Made this today. I divided into 2 bread tins for a shallower bread. It’s delicious! It’s a little expensive, but totally worth it when you see how much you make.

I plugged the recipe into chronometer and got 76% fat, 11% carbs, 13% protein.

A 20g serving (1/50 of total recipe) has 9.2 g fat, 2.8g carbs (of which 1.9g is fiber) and 3.6g protein.

In this picture you’ll see the bit I’m keeping to eat over the next week, and 6 similar sized pieces that are going into the freezer for the future.

Can’t help wondering what it would be like with a few (and I mean a few) freeze dried raspberries and a few dark chocolate chips!
