Nitrates in Bacon?
Apparently nitrates are good for dilating blood vessels and therefore helpful for my Raynauds - hence I am confidently continuing with my bacon habit

I don’t eat much meat myself – some fish – but I’m often looking for better sources for my family. I learned a lot reading Marion Nestle’s books – as many of us know, industry has insidiously influenced the american diet. We know it’s happened with sugar, high fructose syrup, etc, etc, don’t think that every food industry and lobby out there isn’t looking after their bottom line, which may or may not have anything to do with better health.
Nina Teicholz, in her Low Carb Breckinridge Conference 2018 presentation, looked at the absolute risk in the IARC study of processed meat (bacon) and cancer and they were found to be 1.18% based on selected epidemiological studies. The relative risk was reported as 18%. Absolute risk of less than 2% is not valid as the result is too susceptible to confounders in the study. So the IARC study that generated the media was another exercise in bad science. She pointed out that the potential dose of nitrates consumed from plants could be higher than from nitrate treated bacon.
N-nitroso compounds get a mention at 13:00 min when the dose used in rat studies used in the IARC report was noted to be exaggeratedly high and not comparable to human consumption.

Nitrites and N-nitroso compounds: “the major source of these biologically reactive compounds is derived from the bacterial and mammalian metabolism of ingested nitrate” (1)
We ingest the nitrates and metabolise them into the the N-nitroso compounds that are mentioned as concerning.

Wait,does that mean eating nitrate containing veggies is like eating nitrate cured bacon,we get similiar amount of nitroso cancer causing compounds from both?
I was avoiding nitrate cured meats,is modern nitrate fertilized vegetable just as bad?
That was my take away. I’m choosing not to question it. Bacon is in, spinach is out.
