Newbie Questions

New to the Keto Way of Life. I can’t, however, find answers to the following:

Is there any such thing as too much salad/veggies? (I don’t eat the high carb veggies.)

Does anyone know of a tomato paste that doesn’t have sugar?

Does anyone have the perfect method of making hard boiled eggs and the shell comes off easily. I have tried many, many things over the years…

I drink lots of water with lemon slices. Is the lemon a no-no?

Thank you! I can’t believe how much better I feel by not feeding my carb demon.

You can’t eat too much salad. Basalmic yeah. Tomatoes yeah. Skip tomato sauce, at least at first.

Drop hard boiled eggs in cold water when done works pretty good.

As far as eggs go, I use a solicone muffin tray. Put an egg in each spot. Preheat your oven to 325. Bake eggs for about 25 minutes. When done, dunk them in ice water. Depending on your oven, you might have to play with time and temp. Anyway, I get eggs that are super easy yo peal.

I use an instant pot for eggs. I put a dozen eggs on a steamer rack, add 1 cup of water, set the timer for 5 minutes and leave them another 10-15 minutes when done. I think the pressure helps separate the win from the shell.

Cooking eggs in the microwave will separate the shells from the eggs. It will pretty much separate the eggs from the eggs, too! :rofl:

Salad and veggies- even low carb veggies do count toward your daily total (20 g daily to start) Read labels or plug into my fitnesss pal or some other tracker to be aware of carb content. Some count total carbs and some do net (carbs minus fiber) which will give you more wiggle room with veg and avocados.
For hard boiled eggs, I add mine to cold water and turn off the burner once the water boils. Let them sit in the hot water for 12 minutes, then put in ice bath and they peel easily. Good luck!

Also, once boiled, put into a small jar with a little bit of water and put a lid on it and give it a LITTLE shake… VIOLA!! Shells are off.

About the eggs, I add a good amount of salt to my water.

I am ashamed I didn’t think of that!

I do something similar for peeling garlic. I use two metal bowls (soft bowls, like Tupperware don’t work very well, needs to be a very hard surface). Put a handfull of garlic cloves in, close it up like a clam, and shake vigorously. Less than a minute later all the garlic has been peeled.

I put my eggs in the water, bring it to a boil. And once boiling starts, turn off the heat and let sit 10 minutes. After that drain off the hot water and replace with ice cold water. I get bright yellow yolks this his way, and the she’ll never sticks. The wife on the other hand, leaves them boiling sometimes 15 or 30 minutes, just lets them cool enough to handle and they are pitiful. They look like they have the mange (or mixi (sp?)) when peeking them. And the whites are somewhat greenish as well as the yolk being an olive drab. Same eggs, way different outcomes.
