New to Keto, need food idea for retreat this weekend

I just started keto on Tuesday and am doing well so far. Down 10 pounds :slight_smile: I am going on a Buddhist retreat tomorrow where they observe vegetarianism (although I’m not a vegetarian) so I need to be mindful of what I bring for lunch tomorrow. They said to bring something hearty since we don’t eat after noon on Saturday until Sunday breakfast. I’m looking for something keto friendly that is vegetarian, hearty and that I can eat cold. I know that’s a lot of parameters but I wonder if anyone that has some experience with quick and easy vegetarian keto meals has any suggestions? I was thinking hard boiled eggs and avocado on top of spinach but Im not sure that would be enough. Thanks for any advice.

yep, deviled eggs came to mind! I also like cheese, nuts and salami.
