I accidently bought 6 gallons of milk for delivery instead of 3.
I hate wasting food, does anyone have an idea for how I can do something useful with 3 gallons of milk before it spoils?

Greek Yogurt? Then at least you can do something with it that gets a bunch of the sugar back out of it. Plus you can freeze it then.
If you have the room in your freezer you can freeze it in its original container. (If plastic.)
It is never a bad idea to have some food stored for emergencies. And particularly now, when we are looking at possible disruptions in the supply chain this winter.
As long as it is sealed and well-refrigerated, milk will last quite a while, even past the sell-by date. But I would go out and buy a container or two of Greek yoghurt and turn the milk into whole-milk yoghurt. You want a tablespoon (15 mL) of yoghurt per pint (480 mL) of liquid. I make my yoghurt with a 1/2 gallon (1.9 L) of milk plus a pint (480 mL) of heavy cream. (Note that the Imperial cup and gallon are significantly larger than the U.S. measures).
We freeze milk. Though I personally like the yogurt idea. And you make yogurt pops if you have kids (or I guess if you like them).
