Need help/idea with the coconut flour

So before I get into the keto ship, I prepared and purchased 2 packs of coconut flour, thinking that it will be easy to make some good thing with them.

After I tried a few recipe on the website, I kinda lost my confidence, as they don’t taste as nice as the things that I know (like waffle, cookie, bread)

Too soft and powdery(not really, but I don’t know how to describe the feeling…), sometime the thing inside can be totally uncooked.(it is one of my experiences when I made the coconut flour bread)

Does anyone manage to make cookie/bread/waffle that is almost like the real deal using coconut flour?

I know that there might be some people who are going to recommend almond flour… I will consider this idea, but not now, as I am afraid that almond flour will give the another kind of bad result, thus making me need to use up two different flour in an agonizing manner.

I often mix them to dip fish before pan frying. I love coconut flour for making fried calamari. I don’t try to bake with it.

It can make really good recipes, BUT it’s very tricky to get the quantities right and the tiniest variation causes big differences in texture. You have to be so careful weighing it out and sticking to recipes, but it is a skill worth acquiring.

I’ve found it a bit tricky to use, sometimes things have turned out well, & then another time not so good… what recipes have you tried?

Coconut flour can make a great pie crust and is excellent in olive oil cake (find on ketoconnect.net).
Sometimes blending with almond flour can make the consistency better, combining a heavy flour with a light one.

Coconut is a great breading for anything you want to fry, chicken, fish, veggie fritters.

Did you try this recipe for a coconut bread?

As other mentioned it goes well with almond flour. Most recipes that mix them call for much more almond flour than the coconut flour.

Cocnut flour works well as breading for liver, so I’m not surprised @collaroygal recommends it for anything fried. The first keto cheesecake I made, the store was out of almond flour so I used coconut flour instead, and the crust came out fine. I have also successfully substituted it for almond flour in Fathead pizza crust. To tell the truth, I thought they were interchangeable.

Yes I found one on the diet doctor site, Coconut-flour Bread. Uses coconut flour sea salt, baking soda eggs and coconut oil. Really good when hot with butter, spread with cream cheese or dipped in olive oil! It makes a small sized loaf. My hubby loves it too.

Why will it be agonizing for you to have 2 different types of flour in your house? The shelf life on these products are pretty long so you could just leave them in the cupboard until you need them in the future.

Anyway, I keep both coconut and almond flour on hand at all times in my house. We definitely use way more almond flour as it seems to be more versatile and work well in more dishes.

I have used this recipe for waffles and pancakes and even my 4-year-old likes them

4 oz cream cheese (soft)
4 eggs
1 Tbsp melted butter
1Tbsp powdered stevia (I don’t use this because I cover it in sugar free syrup so it seems silly)
4 Tbsp coconut flour
1 ½ tsp baking powder.

Super yummy.
