My new favorite way to cook bacon: In a big pot, on low

We’ve tried a few different ways to cook bacon since we went Keto in June 2018.
Bacon is very forgiving, almost any cooking method will work.

This method prevents splatters, lets the bacon cook evenly, and is slow enough that you can do other things like coffee or whatever, while it’s cooking. Cleanup is one pot and a fork, about as good as you can get for any dish.

Put the bacon in a large pot. Ours is 5.25" deep and 10.25" across the top. Or, 13 cm deep by 26 cm across. It’s the one we usually use for chili, stews, etc. The high side stops splatters from escaping.

Heat it on a low setting (our gas stove burners are marked 1-6; I had it on 2). Once it starts softening up, you can separate the slices with a fork. Move them around a bit every now and then.
Turn the heat down to the lowest setting as soon as you can. The bacon fat will simmer lightly.
Move the slices around every now and then until they’re done the way you like them.
When done, lift them out with the fork.

Afterwards, pour the fat off into a container for use later.

Or drink it, after it cools, but before it solidifies. Yum!

I separate slices and bake it at 350F on a sheet pan. Easy. Nice, flat, slices when done. Put it on parchment paper for easy clean up, pour the fat into my lard jar.
