I had the opposite experience at Thanksgiving with extended family.
My sister-in-law asked we make a keto pumpkin pie for my brother. I’ve been trying to coach him into being fully keto, all the time, and while he has cut his insulin in half, he hasn’t gotten all the way off. He still falls off the wagon too often, but last checkup, his A1C was markedly better.
Anywho… my wife looked up a recipe, made a nice pumpkin pie with almond flour crust, filling with heavy cream and some Splenda (brother’s choice), and we brought it to the get together. Turns out about four of the group wanted to try it. One is guy who found he’s got celiac and gone “gluten cold turkey”, the others were just hearing about keto and wanting to learn more.
