Thank you all for this Fantastic Forum!
I’ve just started, and I’ve lost 20 lbs, but I’m TOTALLY CLUELESS bout cooking and counting carbs. So assume I’m an idiot.

Here are the “net Carbs” from 2 cups of my first ever keto-chili.
Hamburger 80/20 0
Bacon 0
Sausage .5
Purple onion 1.2
tomato paste 2.6
store chili packet 2
Diced tomatoes 2.5
Fire Roasted Tomatoes 3.5
Sour Cream 1.9

total= 14.2 net carbs! UGH

I THOUGHT I WAS BEING GOOD! pfft.
Well, help me out here. I suppose this number can go way way down. I’d really like to keep the sour cream and the Fire Roasted diced tomatoes cause DAMN that’s good.

  1. how can I lower this?
  2. it is NET carbs I’m supposed to be counting, right? Carbs-minus-fiber?

Could remove the onions (although I wouldn’t, I love the flavor), and what is the carb content of the chili seasoning packet? A lot of them have corn starch or enriched flour as an ingredient. I personally use simply organic chili seasoning:

Yes. Net carbs = total carbs - fiber and sugar alcohols

I made this recipe. It was great.

You could cut back on the tomatoes some and ditch the tomato paste. And use chili powder instead of a packet which has a carb content from added sugars most likely. You could also loose the sausage and replace that with ground beef or pork.

I substitute creme fraiche instead for sour cream. Similar taste with no carbs and loads of delicious fat.

Thank you all a TON!
LESS TOM,
Creme Fraiche
homemade spice mix instead of store bought!

I just use tomato paste, not actual tomatoes, and onion / garlic granules rather than real onions.
