My mum is watching MasteChef and I just saw Gordan Ramsey asking the Blood team to cut the cooked crackle off the pork belly they are cooking and cut the fat off from between the meat and skin and throw it away ‘saying people don’t won’t eat that.’ I almost cried. We eat the pork belly whole, that fat is the best bit!!!

He put for them to put the crackle back on with salad between it and the meet. That lovely layer of fat that renders down between the skin and the meat is what got cut off. When I carve up a roast I sneak bits of that fat

Sidetrack; where can I find crackling already cooked, carveries? you know those places at shopping centres that do the roasts an stuff? Man I just wanna pull in and buy a bucket of it, lol.
