Mad hankering for carrot salad

Hi all,

I’m having a mad hankering for a carrot salad I used to make. I see carrots are basically 10g carbs per hundred and 2.8g of fiber. Which puts them at net carb 7.2%, which is still too high for my satisfaction.

I usually shred the carrot and notice there’s a LOT of juice so what I’m wondering if anyone knows of a way to determine how much sugar is in that juice? 'cos I could throw out the juice and still enjoy a lower carb (say <5%) salad possibly.

Thoughts? Does anyone regularly do anything similar?

p.s. RECIPE:
2 shredded carrots, add
olive oil
lemon juice
tamari nuts (walnuts or other suitably low carb… pecans etc)
or simply any salted nuts will do

Dunno about the juice.

You could try a salad of grated daikon? Daikon has 4.1 total carbs - 1.6 g fiber = 2.5 net carbs per 100 g. If you want it to taste sweeter (more like carrot), maybe add a bit of stevia.

Not sure how much the carrot juice is worth in terms of carbs I’m afraid but I make a carrot salad that is about 50% grated carrot & 50% pizza cheese blend - that would reduce the carbs. I add quite a lot of chopped continental parsley & dress it with olive oil/red wine vinegar. It keeps well in the fridge for a couple of days - actually it’s better if you let it sit in the fridge for at least 8 hours before serving.

Thanks for your replies. I tried the carrot with cheese salad idea. Good solution, though not quite what I’m after. I’ll try daikon (if I can any).
