Pancakes! Lowest carb

I make these for my grandkids on the weekends. They love them!

1 tblsp 0 carb mayo
2 eggs
1 tsp baking powder
1/2 tsp vanilla
cinnamon to taste
sweetener to taste
(you can add any nut flour to make fluffier)
1 tblsp of coconut flour or more if you want it more dense
Mix well and butter your pan!

I double the recipe and get 12 small pancakes.


Anyone tested BG on a low carb pancake mix?

I did a test of half your recipe as a crepe. I think the texture is spot on. I’ll post any other experiments. :yum:

These are really good. I have just made some wraps with it - basic recipe with seasoning instead of sweets stuff. I also made as above with some added nutmeg. To go with it I made a butterscotch sauce with unsalted butter, cream and sweetener, reduced to a sticky sauce. I didn’t have any but I think they would be great with some mascarpone and then drizzled with the sauce. Decadent. Nice!

These really are very good. I just made a half portion and wolfed them. I added a small splash of ACV which seemed to add air and make them fluffier. I made a sauce with butter, Truvia and a little molasses. Pretty darn tasty!

I use a tblsp maybe a little more depending on how thick you want it. I use coconut flour in mine.

Made this with 1 T almond flour and 1 T melted butter – waffles!!!

Just don’t fill the waffle iron more than halfway – these are not thick and sticky like Zorn waffles. They are light and fluffy and just as delish.

How are the wraps? I was wondering if these would make a good flour tortilla substitute…

My daughter loves these. Today I needed to send her a sandwich and I didn’t have any bread prepared. I used pancakes as bread and spread nut butter. A fast solution for my hectic morning routine.

Double the recipe and add 2 or 3 tblsp of coconut flour. Close to texture of carby pancakes!
