Love fish but gotta remember

I love all kinds of fish but have been skipping it lately in favor of beef, pork and chicken legs while I’m adapting. Tonight I cooked some wild caught cod in olive oil and it was delicious! I had it over greens with more oil but next time I will add butter to the top, because it simply wasn’t enough fat for me and I’m still hungry. I’ll do it right next time! :slight_smile:

A simple butter/lemon juice sauce is tasty with fish and nice on the greens too.

Cod with bacon and greens is delish, if that helps

Always Keep a log of compound butter handy.

You can also sauté fish in butter, lard, or tallow. Olive oil is not the best to cook with, since it has a relatively low smoke point, and some of the polyunsaturated fatty acids in it can get damaged. (Olive oil doesn’t have as many PUFA’s as most other vegetable oils, however, so it is still better than they are.) Of the vegetable oils, coconut oil is the most stable when heated and has the highest smoke point.
