Indeed. I use my fatty sauces for the leanest pork I am still able to eat :slight_smile: It needs a bit help but it’s quite enjoyable then. Anyway, I love mustard and vinegar. Yolk and sour cream too, actually…

I enjoy a Butter, Garlic, Cream and Mustard sauce on Mackerel. Don’t suppose you guys have Colmans mustard?

It is hard to find in my area (Front Range of the Rocky Mountains) but I can find it and I like it a LOT. Love adding it to beef dishes.

I made some Colmans for Christmas .Horseradish gives a nice twist. (Yes it says “Wasabi” but…)

Try blending butter, garlic, and fresh herbs like parsley or thyme for a quick sauce. Another option is mixing sour cream with Dijon mustard or lemon juice

Tarragon is essential in Bearnaise. Yummy!
