Xanthan gum definitely helps the crust hold its shape better. I tried making sausage rolls with fathead dough. Without the xanthan gum the dough puddled up around the sausages. With it, it retained its shape and made these beautiful rolls. (Sorry I don’t have a picture for the rolls I made without – my inclination is to only take pictures of pretty food).

I made this tonight. It was great! My kids didn’t like it too much, but my wife and I did. Do we know what the nutritional information is for this? I have started logging my food to ensure that I am hitting my macros. Or at least understanding what they are. :slight_smile:

Thank you for the most delicious keto pizza ever. So simple to make.

Here are two pizzas, one with Carl’s recipe (experiment 3) minus Xanthan and the other is a regular pizza with flour. I’d prefer Carl’s every single time.

I let you guess which is which.
