Lamb offcuts

My butcher saved his lamb offcuts for me and sold me a big bag for $6 AUD/kg (chops are typically over $40). Australian lamb is of outstanding quality and grass reared as standard. It was so fatty, marbled and delicious with lots of marrow chunks, ligament, tendon and bone to gnaw and keep for broth. Super impressed and satiated- granted not the prettiest cuts of meat and of varying sizes, but for my needs it’s perfect :slight_smile:

Looks great Scott nice one… why is it so expensive in Oz?
Here in the UK I pay about £10-12 a kilo for lamb chops and less for leg/shoulder.

This particular butcher is top of the range and the recent droughts have not been kind to Australian agriculture :frowning:
