Keto Scotch Eggs

6 - large eggs
1 lb bulk (zero carb) pork sausage
2 oz. crushed pork rinds (crushed like panko crumbs)
Almond flour for dusting

Boil your eggs to your liking, soft or hard boiled. Peel the shell off of the eggs, rinse them in cold water and dry then. Dust the eggs with a little almond flour. Divide the sausage into six equal parts, Squash the sausage in individual large patties. Put one egg in each sausage patty and wrap the sausage completely around the egg to seal it. None of the white egg should be showing. Roll the sausage balls (with the eggs inside) in crushed pork rinds and press them into the sausage,. Cover generously. Put the eggs in the frig for about 30-60 minutes. Prepare oil in your frying pan or deep fryer and drop the cold eggs inside. Brown on all sides to ensure the sausage is cooled through. Remove the eggs from the oil and place them on a paper towel to pick up any excess oil. I used peanut oil to fry mine in a frying pan.

Cut the eggs in half and serve them with mustard. Yummy!
