Keto sausage balls

Tweaked the hell out of the recipe. I am very pleased with them. Even got my dad to approve and if you knew him you would know how much of a big deal that is.
Anyone want to guess how many carbs are in these ? :slight_smile:

I tweaked the recipe. I used 1lb sausage. Like 3 cups of sharp cheddar cheese (0 carb piggly wiggly brand) and 1/2 cup almond flour meal. 2 tsp baking powder. 1/4 tsp salt. 1/4 tsp pepper. 2 tbsp parmesan cheese. 1 egg. 2 oz cream cheese. Mix all together and rounded into balls. I got over 75 balls from mine. Place on cookie sheet. And baked at 350 for 20 mins. I recommend pouring some grease out halfway or else it may drip down on your burner…it did mine
It was only 7 net carbs for whole batch !

I’ve got some ground lamb I was going to make meatballs out of and have some Shirataki spaghetti noodles and low carb Rao marinara sauce.

I might try your recipe!

That sounds good. I have yet to try those shiritaki noodles. I have used regular sausage balls in my regular spaghetti as meatballs back in my carb days lol. So these may be good in keto spaghetti too:)

Shiritaki noodles are a bit tricky. Have to rinse them good, boil them for 5 min and then dry fry them to get the smell out of them. If you do all those things then they are fine.

I tried the rice version in my Jambalaya yesterday and it was good.

Were you tweaking the sausage ball recipe that uses sausage, cheese and Bisquick? Or was it another recipe? I keep thinking a keto version of the Bisquick one would be delicious!

My husband makes us pancakes sometimes with CarbQuick, which is a low carb version of Bisquick. I wonder if that would work for the old Bisquick sausage balls?

I tweaked a keto version that I found on Pinterest. Original keto recipe was 1 carb per sausage ball.

Compared to the bisquik. They are very similar. I made bisquik ones today for my sister. Made these for me and my mom.

The original Bisquick recipe is 7.5 g carbs for each sausage ball. Substituting CarbQuick gets you down to 1g per ball.

That’s still pretty low carb and easier than this if you don’t have the other ingredients or time:) thanks. I didn’t know there was a keto bisquik out there

Sounds amazing need to try this. My wife makes turkey meatballs but sausage ones sound way better! Especially with some zoodles and your favorite sauce yum!
