Keto: In It for the Long Haul

Why Keto?
I am in to Keto for the long haul: health, energy, and weight loss. Just started week 4, no recorded weight loss yet–just steady at 160. I didn’t weigh myself until end of week 2. Yesterday was my first 18/6 IF–to see if I can up my game plan a bit. Still waiting for my whoosh experience.

I am 67 years old, 5’-2 , and quite fluffy in my upper torso. I hope my eyes aren’t deceiving me, but my clothes feel looser this week–even though the scale hasn’t moved. Nonetheless, I am very happy, as I was contemplating b reduction surgery. Now, I’m confident cosmetic surgery won’t be necessary because I am into Keto for the long haul, and have great expectations.

I’ve have been dealing with different levels of Vertigo for two years now, (an inner ear balance problem). Saw 5-6 doctors and learned nothing other than this can happen to people my age. Insulting to hear. I want to tell you at week 4 the ugliness of Vertigo–lightheadedness, dizzy spells, walking sideways occasionally, and stumbling is gone. It just stopped. I’m gonna give the credit to Ketogenic diet.

So far, I haven’t missed sugar nor high carbs. I eat at 10a in the morning–usually a brunch like an baked Italian brat with mustard. Yesterday I ate fried bacon, and then used bacon drippings to sautéed a box of chopped mushrooms, and topped it off with grated parmesan and shared my pan of goodies with a friend who is interested but still on the fence about Keto and giving up his beloved fruit and breads. I think he’ll turn the corner soon and take on the Keto lifestyle.

Our friend stayed for dinner too, and I made sirloin tip grilled fajitas with onion and yellow peppers in a little olive oil. I know the onions and yellow peppers are naturally sweet, but I personally ate only bits of them and appreciated the flavor they added to the meat. Topped fajitas with olives, cheese, sour cream and seasoned with coarse black pepper and H pink sea salt. Delicious and satisfying.

My husband and friend ate their two fajitas on tortillas, while I ate my serving off my plate, no tortilla. It never bothered me once not eating the tortilla.

I am reading and learning more and more each week about making my Keto meals savory and satisfying. I can do this. I’m eating better than I ever have.

The big blackboard in my kitchen lists 50 or so items I can eat on the Ketogenic diet. Its there to remind my husband this is what I can eat. And it is a subtle hint I’d like him to join me on this journey. It also reminds me what I need to stock up on at the grocery store. Grocery shopping and cooking are a new adventure–fun!. Tonight is Turkey Polska coins in fried cabbage and butter. My husbands likes egg noodles with his entrée, but I am totally happy to go without the noodles.
