Keto Ice Cream - what's the catch?

I don’t know if there is a catch, but I hope not since my dinner was just 1/3 pint of the Rebel peanut butter fudge. (Not something I normally do, but I enjoyed the heck out of it.)

I can’t imagine finishing a whole pint in one sitting because, for one thing, it freezes like a rock. They say to leave it out 15 minutes before eating. They lie. The center of the pint was still solid after 30 minutes. It is a test of patience! One I fail every time. Once it thaws it is creamier, but I can never seem to wait long enough. I just scrape at the edges that are more melted.

I find these things sweeter now, so that is a thing. I generally have had enough after a half cup to cup. Doesn’t take much. Although I gave it the old college try tonight. :joy:

I was eating the Rebel Vanilla for a while as a snack after dinner - Until I realized I was getting incredible bloated, like I looked 6 months pregnant, and it was only when I ate the Rebel. Did a little research and figured out it’s probably the Chicory Root Fiber. I started eating Ketogenic to feel better so that’s off the table.

Yesterday I made some of Carrie Brown’s Butter Pecan last night and it’s way more delicious than anything in a carton! Tonight we are churning some Matcha Green Tea ice cream :wink:

Well I was incredibly bloated anyway, hence why there was ice cream for dinner. :rofl:

But that is something to think about. I’ll have to watch for it.

Make your own! Like @David_Stilley mentions. It’s delicious and no digestive side effects. It’s worth buying an ice cream machine in my experience.
