Keto Friendly Pancake Syrup

(Zack F) #1

Years ago when I was low carbing I tried some sugar free syrup. It was beyond awful, dreadful and disgusting. I don’t remember the brand. I’ve seen Mrs. Butterworth’s mentioned a couple of times. I don’t expect it to taste like the real stuff but I hope over the years something is in the ballpark nowadays. Any recommendations?

Melt ghee (clarified butter), and add flavour drops of your choice (vanilla extract, maple syrup flavor, almond extract, lemon extract, …etc), or add spices to melted ghee (cinnamon, pumpkin spice mix, etc).

Genius

I use Walden Farm’s syrup and I think it’s delicious. I think I like it better than I liked sugar syrup before keto.

This reminds me that syrup is one of the few carbage things I totally gave up even before Keto. If I ate even the tiniest amount I would have a terrible hypo reaction. I’ve heard this from other WLS folks as well. I am so happy not to be living like that today! Good luck in your search.

YES!!! Thank you so much for this recipe!
I can’t do any type of alternative sweeteners & I’ve been looking for a recipe just like this.:kissing_heart:

Has anyone tried the lakanto syrup? Pretty high ratings…

I just tried this but being a last minute solution i had to improvise a bit. Melted 1/2 of a 1/4 lbs. stick of grassfed unsalted butter, without removing anything from it once it melted; then added 1 tspn of vanilla extract and 1 tspn of erythritol. End product was ok  but may reduce vanilla extract next time, plus try to make some ‘simple syrup’ with the erythritol as much of the one i used remained on the bottom of the pan, undissolved. I may also buy some ghee and do the same as above also.

Even better - whipped maple butter. Make your own whipped butter, or buy it in the dairy case, it comes in a round container like cottage cheese. Let come to room temp, then add maple extract and Swerve confectioners sweetener, or your fav, to taste. I like mine thick so it’s almost like frosting. I pop it in the microwave for a few seconds on the defrost cycle, so it softens but not melts, and use it instead of pancake syrup. Mmmm.

I quite like this stuff - surprisingly sweet & maple-y for my present keto palate. Highly recommend! I decided to buy it and use it with less stress than trying to keep to 1 tblsp of real maple syrup (which I love, and used to use at least 3 tblsp of per serving etc).

I add it on top of a pancake made with coconut, erythritol, cream, egg - along with on top of my accompanying butter-warmed frozen blueberries.

Organic, stevia + sugar alcohol based, and NO WEIRD TASTES. Better when warmed, but okay straight from the fridge when poured onto a hot pancake.
