Found this recipe on an Icelandic website and seen as all they eat is fish í figured it was worth trying. And OMG it was delicious.
Now its in Icelandic so I’ll translate it for you. Give it a go.
4 pieces cod or haddock (800g approx)
1 box papríka cream cheese (í got philidephia 280g pot, 1 red bell Peper, 1 teaspoon papríka powder and half a teaspoon garlic pure, minced the bell pepper and added it and garlic to the philidephia as its not easy to find papríka cream cheese here in the UK)
1 box mushrooms 250g
1 large spring onion ( I used half medium onion as I dint have spring onion) I also added some chives and half a white onion.
1 small pot full double cream or sour cream
1 knorr vegetable stock cube cut down or crumbled
Fish seasoning use any fish seasoning you prefer
All purpose seasoning (I only have dun rivers)
Shredded cheese
Put butter 1 table spoon in frying pan and add the leak (onion) and mushrooms ready cut and cook in a frying pan.
Add fish seasoning and all purpose.
Add the cream cheese once the mushrooms and onion is cooked followed by the cream
Ensure the heat is turned right down and add the stock cube ready crumbled.
Simmer for 5 minutes or so
Place the fresh fish in a backing dish season with salt and pepper to taste ( and pour sauce over the fish and finish with a sprinkle of cheese.
Pop in the oven for 20 minutes and serve with veg or just eat on its own its that good.
This recipe would serve 4 people
