Keto cookies too soft

i made some cookies today using…

almond flour
1 egg
some butter
baking powder
vanilla essence
erythritol

they taste great but they are a little soft. almost bread like. any idea how to make them harder please

Bake a bit longer, maybe?

What amounts did you use?

200 gram of almond flour
45 gram butter
1 medium egg
30 gram sweetener
1 1/2 teaspoon of baking powder
1 tablespoon vanilla extract
1 teaspoon salt.

sorry for the americans reading this but all that “cup” and “oz” measurements confuse the crap out the rest of the world😊

Too much baking powder I’d say.
Try using just half a teaspoon.

I have the answer, HEMP HEARTS. They taste fantastic and add a nice bulk/crunch to your cookie. I think just almond flour on its own will not achieve this. Keto connect has a great recipe for a hemp heart cookie though it has PB in it. I guess you could sub for something else I might try pumpkin for the fall. I also just make a recipe I found on line that has both hemp hears and almond flour and they are really good held together and crunchy.

Try using some psyllium powder.

This will give a more solid cookie texture, I assume it is the snap of a traditional cookie you are looking for. if so this is the answer.
