KETO Chocolate Mug Cake

No picture (maybe next time). I decided I needed a treat and searched for a keto mug cake…

Mix 1 egg, 1 tablespoon of heavy whipping cream, 1 tablespoon of almond milk, 1 teaspoon of vanilla in a small bowl.

Mix 2 tablespoons of cocoa, 2 to 4 tablespoons of swerve, dash of salt, 1 teaspoon of cinnamon, and 1/4 teaspoon of baking powder in another small bowl.

Combine dry ingredients with wet ingredients. Coat a cup or ramekin with butter. Transfer batter over. Cook in microwave for 70 to 80 seconds. 72 seconds seemed to be the butter zone on my microwave.

Unless I miscounted, net carb count was 3 carbs. Next time I make it (probably tomorrow night before my egg fast starts), I’ll snap some pics. It was super easy.

That’s similar to this popular one. My wife and I share it all the time, with whipped cream on top. It is so moist and dark, just how we like it. ~6 net carbs total if you don’t share.

I left mine plain. I just needed a little treat. That one sounds good too, but I didn’t miss the almond flour or coconut flour at all in this one. It’s amazing what a few odd ingredients can do. We never needed (real) flour at all…

Did you find it very salty??

No I didn’t. I usually just use one short twist on the salt grinder.

I put no salt and still tasted salty to me…thinking it must be the baking powder?
Or else the cocoa powder is simply too strong maybe?

I would guess the baking powder over the cocoa. The cocoa would be bitter but not salty. You normally want a little salt to intensify the chocolate flavor. Make sure you’re not going over the 1/4 teaspoon of baking powder or that it’s not too old I guess (not sure if it gets saltier with age?) … Make sure you’re adding sweetener to taste (I use some swerve and some liquid stevia… but you may have to vary that on what you tolerate best) …
