Beef, celery and onion. We get a lot of power outages here, and my freezer is small. Taking advantage of meat bargains is easier if I can preserve it. Two meals for me in a pint jar, and I can just throw on top of some kale, or spinach.

Look at the date on these dehydrated mushrooms purchased when 50 cents a pound. They are still ok to eat. Vac sealed in the jar with an oxygen absorber. I can take a few out, and re vac the jar. Dehydrating intensifies flavor. I like to blitz to dust and pour on hot water. It makes a nice drink in the winter with a twist of black pepper and some cream.

This is fantastic! Did you mark somewhere the nutritional information? And if you did, did you write it on a log or a label on the jar?

A pint jar will hold one pound of meat. Just deduct for vegetable weight etc and you have your totals. Add a label to the top of the jar so you remember what is in it. Shelf pretty for 2 years, flavor deteriorates at about 5 years. Canning chicken breast is nice for salads, and the chicken releases its own juices into the jar, so just raw chicken, nothing else, and can it!
