Keto Blueberry Poundcake Muffins

I used the following recipe as inspiration: https://www.ketoconnect.net/keto-pound-cake/

I changed a few things (switching out some almond flour for coconut flour, adding an egg and a tablespoon of butter) and making them into muffins for easier portion control. I thought the texture was nice but they were way too sweet, so I’ve significantly reduced the sweetener in this recipe from what I actually used. I thought the blueberry flavor could have been stronger. Next time I’ll add in teaspoon of blueberry extract or bakery emulsion.

Dry Ingredients
1 cup (96 g) almond flour
1/4 cup (28 g) coconut flour
1/2 tsp xanthan gum
2 tsp baking powder
1.5 tsp ground cinnamon
1/2 tsp pink himalayan salt

Wet Ingredients
4 oz cream cheese, softened
5 TBS unsalted butter, softened
1/4 cup Sukrin Gold (or Sukrin)
1/4 cup sour cream
5 large eggs (room temperature)
2 tsps vanilla extract
1 tsp blueberry extract
10 drops liquid sucralose
1 cup (150 g) fresh blueberries

Preheat oven to 350F.

Put parchment cupcake liners in a regular size muffin pan. I was able to get 17 muffins from this recipe. Lightly spray the bottom of each cupcake liner with coconut oil baking spray.

Sift the almond flour, coconut flour, xantham gum, baking powder, cinnamon, and salt into a medium bowl.

In another large bowl, add the cream cheese, butter, and Sukrin Gold. Beat until well combined.
Add vanilla, sour cream, and sucralose and mix well. Add eggs one at a time and beat until fully incorporated before adding the next egg.

Add the dry ingredients in 2 batches to the wet ingredients and mix until well combined. Fold in the blueberries.

Put the muffin tins into the oven and immediately turn the temperature down to 325F. Bake for 30 minutes. Turn the oven off and bake for 5 more minutes. Test with a toothpick, it should come out clean. Remove the muffins from oven and allow to cool in the pan for 10-15 minutes, then transfer to a cooling rack.

NOTE: Oven temps vary so be sure to check on the mufffins starting early. If it’s browned all over and a toothpick comes out clean it should be fully cooked through.
