NOT the best “keto tuna melt” but the best tuna melt, period
I’m not going to go into the bread, because their are plenty of keto bread recipes out there, and for that, I’d just say to use your favorite. My GF made one called cloud bread, which unbelievable to me, doesn’t even use almond flour ? How are you going to make bread with zero flour ? Anyway… so light and airy though.
Oh, but I should add one interesting note, I cooked the bread first, and then baked the melts until the cheese was good and melted, all on our BBQ’er… as it was over 100 degrees here in Sac today (loving it ) and we didn’t want to heat up the house with the oven.
Okay, so basically, I just used two cans of this stuff (best tuna ever… uh… grown ? Ha )
Chopped up a dill pickle, and a handful of jalepenos, and a little celery. I only use a little mayonnaise, as the tuna is pretty moist with olive oil, and I certainly don’t drain it. Hit it with a little salt and pepper. Mixed all of this up, slapped it on some of the cloud bread, topped it with cheddar cheese, and threw it back in the BBQ’er long enough to melt the cheese. And Bam ! So freaking good
I ate two of them, and as usual, my GF ate one…
PS, the bread might look dark, but it was only on the edges, and on the underside when cooked. So since the bottom was dark, and the top light, I turned it over, when I put the tuna on it, and before putting it back in the BBQ’er. Zero burnt taste at all.
