Hey guys finally made it back to the forum…3 weeks in f250 with a husband and 4 dogs I was so happy to be back in florida… texas way to hot and food at truck stops became harder and harder to eat so nuts and pork rinds with a ton of chicken…so needless to say I came home all bloated and puffy.
. I ended up with a tick on me after taking dogs out for walks and chasing them when they escaped when husband left drivers door open grrr… im not sure if I’m allergic but not one itchy bite but 4 spots appeared…after having to pull the dam thing out
I was so happy to get back to my meat again and my pool…hubby is out again so it’s just me and the dogs
Bloating has now gone cut out the pork rinds and added back two coffee a day…and two meals…Its been so hot here I had some keto chow in pantry so I mixed in with ice put through the blender and then put it through my creami ice cream maker…i don’t add any thing else so it’s basically just protein powder not 100 pc clean but it’s not affecting me.

Wonderful benefits you gained and all in only 2 weeks. Sounds like you skipped right past any adaption which is never a bad thing.

You hit such a key point for so many of us. Just dropping such a small amt of carbs turns us into a whole new person and I was in that 10g range of carbs and when I dumped them I was shocked how much better I became too!

Join right in and chat away with us. We have a fine group here and you can’t keep us quiet and we give support when needed! Welcome!

@JJFiddle, you got a craft/sew room to yourself now. I like that. Always nice to have that space to do what you will.

------------I think I will be hitting Japanese place out for lunch later today. Kiddo wants to shop some things, so if we go out she is gonna want this place she likes. I can get steak and mushroom, give the mushrooms to her and just eat some plain steak. It will be ok, not preferable but I can come home and then eat a real less pricey steak for dessert in my own home, :wink:

MIL doing tad better but Drs are like…still on that fence, she got fluid pulled off heart area and that has helped her breathing but pnu is not clearing so Docs are like, one way or the other. Nothing more to do but she perked up with that fluid drained so just a wait and see how this goes for her kinda thing. Hubby said if she goes backward and down again she probably won’t make it but maybe she can rebound to have some quality of life? he doesn’t know, so we just are on standby for what happens. Coming to terms with it all better too.

Jerky July is about 1/2 way thru and everyone seems very zc balanced and ZC strong!

I was at a funeral today. My 88 year old uncle passed away at the end of 2 years of dementia. Type 3 diabetes strikes again! Hoping to put it off as long as possible. Got to see all my tubby cousins from this part of the country, and my two brothers.

OMAD. Cold baked beef ribs and 200g Camembert. 2 coffees with a dash of milk, one before the funeral, one for the three hour drive home in a winter rainstorm. You will see podcast recommendation posts from these drives.

I don’t intentionally fast, as I said, but I looked at my burger patty last night and couldn’t bear the thought of food, so I didn’t food, which seems logical to me. If I’m not hungry, I don’t eat. If I’m hungry, I eat until I’m full. Still not hungry this morning, but when I get that way, I’ll eat that burger with probably a slice of cheddar on it.

Carnivore panic time: I live in a place with a community center (and little garden, where I do have a tomato plant growing, so I’m going to have to decide about that when they finally turn red). Someone came in as I sat there and chatted with the coffee drinkers, and said “Eggs went up a dollar (US) a dozen last night.” I looked it up and he was right! All three big groceries had done that. I usually buy jumbo eggs if they have them and “double yolkers” when I can rarely find those, so those are now $5 US where I am. I ran immediately to my local Dollar Store (junk food central, but they do have eggs and canned tuna), and they still had their cage-free large eggs for $3.79 I grabbed four dozen, so the panic abated. But the price increases are hurting. Still cheaper than a bypass operation from eating subsidized junk food, but I’m having to shop the meat sales carefully now.

Tomorrow, breakfast out with a pal, where I’ll have eggs and water, and then grabbing 4 chuck roasts that are on sale for $3.29 US/pound. I love a good braised in the slow cooker pot roast, and the Mexican grocery here has great prices and better sales. (chicken legs are always $1.49, beef back ribs $1.79, chicken livers $1.40/pound, and they usually have beef tongue and brain, if you like that kind of thing. they put t-bones on sale for $4.49/pound every two weeks, so even offer a steak most people can afford once a month.)

Ahhh sorry to hear your Uncle passed! Sending hugs and prayers for your entire family.

I so agree that the ‘type 3’ issue is truly a real deal for so many yet it is ‘so controversial out there’ but I think that damn sugar rules as a ‘wild card of crap’ in our lives. It rules where you are one to be kinda ok or it takes your life in massive grief!

I can see you doing that long drive with podcasts in your ear :wink: :sunny:

yup we are all feeling it but darn put against that medical bill portion we gotta pay and the ‘supps and OTC meds’ we used to take to 'survive our day with gut issues, headaches, and being sluggy and more…believe me our money in our food is well worth every time, even tho we hate the increases LOL Yup, beats the cost of a bypass, you said it!!!

being a tad more carnivore for your lifestyle if you lock in, think 6-8 chucks at that cost cause believe me you will eat those and survive on them and love them. 4 is like, a short amt of our food, but like 8 in there gives you ‘that darn safety net of chow down’ and that is a good price!! I am going no lower than that $5.29 ‘on sale’ range around me so if I hit your price, omg I would freeze out a bunch.

yes all us carnivores shop carefully. don’t forget fish/fow and seafood. any and all sales on things you love, go for it!!

and are ya feeding only you? I got 2 carby eaters, my 17 yr old DD is ‘more LC type’ but hubby is rampant off the charts crap eater but I also have to ‘feed them MY meats’ and I do have to be sure to have alot in that freezer to make it work for the 3 of us. But if you are a lone eater in your home, wow, you got alot of control! Something I kinda wish I had on my buying.

Egg prices didn’t go up here, we have 10 eggs in a box but a dozen would be below $2 too… Less every day as our currency gets weaker and weaker, it’s super weak now.
We grabbed 90 eggs in Saturday as we are modest but need eggs… I eat way less of them now so it will last longer. It’s good to know we still have a single good source of good enough eggs and they don’t bat an eye if we buy it in bigger amounts. The egg lady usually have 20 and not every week. But we appreciate that too. Even if the eggs are often smaller now.

Ruminant need is unaffordable but nothing new with that, pork and turkey didn’t change.

The problem is that Alvaro says the government wants to stop the support (well artifically keeping it low) electricity costs of normal households if that is high. Gas will be still super low, no matter how expensive it actually is. Alvaro checked out real electricity prices and it’s 6 times bigger than what we pay now. He finds it extremely unfair to punish people who heat their insulated houses with electricity… We don’t even have much options here as there is no gas here, others probably use electricity or wood/coal. The government is so big on more sustainable energy and using less anyway but these are just words, they don’t even support it not even in the times when they allegedly do, we tried. It was very costly to make this house this good. We spent all our money on it so it has no paint on it since several years as we had no money left. I understand life is like this, it affects Alvaro more. And indeed, it’s not that fair. We will see. I told him I am ready to try to live in an unheated house in winter but of course, it doesn’t make Alvaro any happier.
And I probably would be cold anyway… I actually would like to heat a tad.

By the way I stopped my cold showers in the last cool days but as our warm water is set to… IDK, 30C? Probably less… I don’t actually have warm showers at all. Just a bit less cold ones, at least in the end… It’s okay. It’s like unsweetened chocolate or unsalted boiled eggs. Maybe not fully ideal but extremely close to it.

Eating wise not much changed, I eat my leftover lean pork today, fried in all the lard I had (15g). And I started to eat bacon as well. My lunch was quite small today. Yep, lean pork is the best at satiation (among my realistic options). Though I still didn’t try to eat exclusively that for my first meal.

Still not fully carnivore but my carb intake gets lower every day, I am quite pleased with what I have. I run out of dairy too, I could eat cheese but it didn’t happen today yet (except maybe 3g, I cooked with cheese and there was a tiny piece left). So I mostly just eat meat and eggs as I actually should.

I am okay with my freezer now :smiley: It may change as I start to store way too much fruit in it (I need to wait until we can pressure can 4 jars) - but I have space now and I can buy some kind of meat in the village and small town any time. Not necessarily exactly what I want but something I still accept. Even like, this lean pork is lovely, I just need something fattier and different sometimes.
But the majority of the freezer is for my meat. And Alvaro sometimes eat a little of the meat but usually don’t so yay. And when he eats it, I don’t need to cook something else for him (apart from the carby side) so yay, again. I didn’t even offer my last 2 pieces of lean pork now, I needed it all. He got some sausage and eggs. And he eats almost all the cheese.

yea we held for a bit than WHAM
I was like $1.29 dozen, then like $1.89, still under that 2 range and then a bam came, I am now about $2.89 per dozen of the cheapy vs. those ‘brands’ which are outrageous in cost for a darn dozen eggs.

But I farmed 400 layers and sold fresh farm and I tell ya the cost of a ton of feed would put our egg biz darn near out of biz just to feed them and then think, our work to get to market and then think cost to get to market as in gas to get to sale farmer market area etc…in the end, it is all gonna go up and up and where it lands will be interseting.

nothing comes down. enjoy your cheaper eggs while ya can :slight_smile: :slight_smile: I did til it was like WOW and oh man this hurts the wallet.

eggs are now the least of my worry. I rarely eat but the family does and things in ingredients like darn cakes I make them but in the end, I just pony up and cut other crap off the grocery list for us to make ends meet.

yea wild times, they are a’comin’ and not one doubt about that. overall global issues will become catastrophic mostlly I would think. yikes

I wish I had a big freezer! I live in an RV, a lifestyle I love, and the fridge/freezers in these are small, maybe half-size from standard US ones. My whole living + storage space is about 350 square feet, and there isn’t a spot for even a small chest freezer, I’ve measured long ago, and I just can’t work out where one could go. So I re-wrap in butcher paper to save space in the freezer, and my “vegetable” drawer I fill with loose eggs padded with clean rags, where people put pickles and so on in the door, i have butter and half-gallons of tea and cold water…

On the other hand, the place where I live feeds us free meat once a month–burgers in the summer, turkey in November and December, sometimes two huge crock pots full of pulled pork, or whatever. So there’s a bonus (beyond loving the lifestyle, the fascinating people, finding the best weather to settle down in, and the free water, internet, and trash pickup that comes with the cheap rent… It’s really ideal living for someone on a budget except for the size of the freezer!)

And because the Mexican store puts on good sales every week, I know in 14 days there will be something else tasty and available for a bargain price. I’ve been living mostly in RVs, some far smaller than this, sometimes well off the grid living on federal land and having only a solar panel for electricity, since i quit the day job almost 20 years ago, and I’m quite the pro at managing tiny spaces. (And for ten of those years I somehow fit an 8-inch diameter dobsonian telescope in there with me! lol. it was the size of my smallest sister.)

The egg prices already went up significantly. And they surely will do it in the autumn or winter again but now it’s the same since months and I enjoy it until it lasts, the same with meat prices. Those are amazing, very little change in the last years. Okay, significant but not crazy and it’s Hungary, inflation is always high. Considering that, I am amazed pork prices changed so little and slowly. Butter doubled, chicken doubled in the last several months… But not pork. The cheepest cuts of beef is in-between but it was a bit too expensive before… Pork is firmly below beef except the most expensive parts I am not interested in as they are too lean :smiley: Deer has a medium (maybe a tad higher) beef price I think? I will check next time. Beef (almost all cuts but the cheap ones) is the most expensive I think apart from some exotic stuff one doesn’t ever eat in bigger amounts… Well I am glad there are cheaper beef cuts so I still can eat beef once a month (or more if I do what I am doing with the brisket, an oz a day or something :D) and that is enough for now.
I can eat all the pork I want without any guilt (not like I am prone to that) or doubt or anything as it’s about the cheapest food I can consume (even cheaper food that would leave me hungry doesn’t count as it would just raise my costs).
Only split peas are better cost wise but I never liked that stuff much. I can make it enjoyable but it never could be a staple. If a carby apocalypse comes, someone kill me please. I think. I am not fully sure, I like living. But I have standards.
But when it’s about food costs, I always consider nutritiousness, the full picture. Protein is fine and dandy but complete protein is better etc. And carbs mess with me so it’s really the best to keep them low. And well, my mental health dictates to have tasty food… Even my physical one as I rather starve than eating something I don’t want, I seriously gag if I try to force it.

I am too dark. And brainless. IDK if it’s the weather or what but I can’t think well today.

We have a biggish fridge but I never have space for my eggs there. I keep my 100-200 eggs in a cupboard, they always last easily a few weeks even when washed (they surely are as they are clean. the ones from the egg lady aren’t :)).
After a month in the hottest summer there were bad eggs, a bit more than usual (the older egg lady had such ones occasionally, I know hens can be tricky sometimes if one isn’t super careful) so I stopped keeping 250 eggs in summer… But I had to buy ALL the eggs from the two houses to survive the times when there are less.

If space is very little, I cook a lot of meat, it is way smaller that way :slight_smile: But I usually keep them normally, meat is dense enough and we are only 2 persons and most meat is mine and it’s only a pound a day… The worst is after big city shoppings, I tend to roast as much meat as I can fit into my mini oven :smiley: But I still rarely put it away, I can eat it in several days, roasted meat lasts super long, that’s nice. I am used to ~4 days with vegetable dishes, roasted meat lasts at least a bit longer (I tend to eat it in 3-5 so IDK how long actually).

Our fridge definitely changed… It was full with vegs before, now there is almost none but there is lots of processed meat and cheese and other kinds of dairy… I don’t eat much processed meat but I like some variety. And sausage is still important, I almost fully dropped the rest. One changes. My processed super fatty meat got swapped with fresh quite fatty meat.

You have a life with interesting aspects, @Keto_Lou! :slight_smile: I am looking forward to read more about it in the future.

you are my world. I am RV to the ultimate with selling my home sooner now after getting my kid into college and me and hubby are going on the road. I am ONE who can get so much meat packed into my RV fridge it is obscene LOL

OK I know what you are dealing with.

Key being has to be repacked. Chuck roasts are tall and bulky, styrofoam packing useless. Take chuck steak and cut in half to make 2 thin chucks. Put in freezer bag. Smash flat as can be…we are thinking THIN stack in that small space. (All freezer bags used washed and resued to save money to buy more meat!)

Think a long thin line to fill the whole darn thing. I take all hamburger out of packs, small into a big old thin burger vs. the fat pack it comes as and I can get so much burger in my RV fridge it is astounding!

Then think something like steaks. Out of that pack to save space, into freezer bags which lay flat and use one as ya need. OR IF MY space is more limited I will cut my steaks into thinner strips and lay flat and get a bunch more into that package, so instead of cooking a full steak, I am cooking some strips from that steak and believe me, it makes a diff in space ratio doing just that and it is finger sized :slight_smile: I just pick up my strips after a fast fry and inhale them wolf style!!

Then think fatter type chicken breasts…debone all chicken you want, cut any fatter bulk areas down to ‘butterfly type chicken’ cut and then freeze flat.

You can get so much on a flat stack if you handle your meat to do just that. I do 2 wks to a month and never have to buy meat cause girl, I got that ‘space use’ just boiled down to pack the darn thing solid in flat form.

Now, also think…buy 2 more chucks. 4 to freeze, 2 in crockpot or how you enjoy to cook. Means 2 are in fridge and being eaten, you know you got X amt of days to eat that meat, so it takes pressure off your freezer but you have food to eat and it is already cooked and ready to serve.

just sayin’ rethink your packaging for freezing. flat. squished meat in just bags can be packed solid into your freezer and give you the biggest ummppp you need to hit sales.

Yes I SO GET YOU big time LOL did the universe send you my way to chat RV space and how some of us minimalist types just love tiny space? Not sure but I get ya full on!!!

Oh and my kid is like, mom bring me some popsicles for the camper and I am like NO WAY in heck I am wasting space on that HAHA I tell her we get to our destination Dad can take ya out to get ice cream or whatever you want but that RV freezer is ALL for meat storage and best back off HAHA :sunny: If ya buy some ice cream pops and I can ‘fit them in some space’ crack in that freezer then yea, but most times one can’t put a sliver of paper thru my packing in that fridge til we eat some of it… :wink:

This morning, a cheese omelet.


We’re headed to town in an hour to shop and eat, so that’s our day. Hubby got the shelves up in “mom’s room” so I’ll be moving books and unpacking music, an easy day. Maybe then I can organize crafts and my clothes, which also live in that room.

My sister and BIL went to full time RVing about 10 years ago when they retired at 55, then bought a house in the NW 2 years ago, but bought another RV, guess they just couldn’t stay away from the life!
The only thing I covet is saving on hotels on our trips. I’d like one for that. Hubby’s not much of a camper.

@FrankoBear the type 3 diabetes condition is so widespread now and people just can’t get it. I put mom on low carb food and I think it helped although it wasn’t strict enough. But when she went to memory care, all the stops came out for her, they fed her desserts and candy even as I was bringing low carb treats on my visits.
Now is the time to take care of yourself, once you get T3D nothing makes sense anymore.
The podcast idea that fattier meat is better for sleep makes absolute sense. No wonder hubby can’t sleep when he snacks on crackers at night! :joy:

Oh if the meat comes in those stupid boxes with lots of air, repacking is a good idea indeed. I hate those, I typically buy my meat in thin plastic (compared to the box. it’s only really thin if I use the meat counter, 2 nylon bags only) and in as big pieces as possible. It’s basically a big meat brick, I really can’t make it smaller without getting out a lot of water!

By the way I need to deice my freezer… I want my future one doing it all by itself, IDK how that works but it’s such a not nice chore for me, I need to get out everything and in the middle of summer it’s a very time sensitive operation while the ice takes its time even with all the hot water and tearing it off as soon as possible… Okay, not sooo long. But I don’t like to do this often.
The ice actually take significant space now. Not as much as in very neglected freezers but still. I open poor thing multiple times a day and it’s TINY to begin with!

I think I still can use some ideas from Fangs but I am not that type who does that all, I just push my meat inside hoping it won’t freeze in odd shapes (usually not as they are meat bricks but some slabs are different and when soft, it can change its shape)… But as I can get meat anywhere, it’s really not that important normally. And before big city or farm shoppings I often make the freezer empty and then I pack the meat better. I only repack the huge slabs (like, 5kg? I don’t cook that much at once for a few reasons) and if needed, the stupid boxed ones (I still can’t say no to certain -50% sales).

Deboning chicken sounds a good idea I think. I don’t really do that ever as I don’t eat chicken so IDK. Turkey is hard to debone so I gave up that. I only do that after roasting the stuff so Alvaro doesn’t need to do the work, he appreciates that. And I don’t need to wait for his bones before I grab them all and put it back to the freezer for a future soup (but maybe I won’t do that anymore, it wasn’t so nice last time. I will just use pork).
I like playing with bones :slight_smile: Alvaro doesn’t. That’s why I get all the very bony parts from rabbits and other small animals (but it’s usually rabbits). Too meaty parts are a bit boring to me :smiley:

Not a hungry day. I tracked 1450 kcal but I have plenty of stuff left to eat for that too. And it’s already kind of late.

Wow 2 days and 2 many posts for me to be able to read !!!:astonished:
@FrankoBear thanks for the suggestions however I am not a podcaster. However I know exactly what the woman was on about because I noticed long ago that I have to be careful what protein I have before bed. Chicken has to be eaten earlier in day, if 8ts just before bed I can’t even drop off to sleep, it make my brain work overtime … fortunately I don’t eat many other lean meats, sometime turkey but generally speaking my meat are pretty fatty. I am not keen on super lean anymore, so no fillet steak and joints of lean beef. .if I eat salmon too late in the day that too keeps me awake too. I also get restless leg syndrome when I have eaten too lean which figures I suppose, if its gonna make the brain busy it must do the same to the legs!

Well an enormously busy day yesterday. Woke up just before 4am and got up at 4.15 as it was pointless going back to sleep. Did my stair runs, ran to work via the tram, spent the morning being trained on the computer for my new job… head was on its way … the staff training in the afternoon and head was gone! Ran home and it was very hot, got on the tram and it was stifling. I just dripped the whole way and then ran from tram terminal home, jumped in bath and dashed to my daughters to feed Astrid. Tidied up her kitchen and cycled the laundry, washed my bedding and eventually got home for 9.15pm. Straight to bed and dropped right off.
This morning was action replay and I just got stuck in at work and did what 8 could remember and I remembered quite a bit surprisingly! I had retained more than I expected! So it was a good day at wotk today and the tram home not quite so hot thankfully. Managed to knock a minute off each of the 4 runs from yesterdays times which was amazing as I wasn’t sure my little legs would carry me today. They do seize up somewhat on the 45 minute tram journies but that is to be expected.

Meals, yesterday cooked sliced chicken with butter for lunch and dinner tandoori pork ribs, wouldn’t have that again! Today same brunch and dinner cold pork cheddar and special butter.

It was a full moon last night. So I got up at dawn (7am) to watch the moon set at the beach. There were some winter rain squalls to spritz me up. Hot coffee on getting home. I did add cream. Thinking about an earlier cooked breakfast after OMAD yesterday.

I’m swapping out bacon from 10am breakfast. I’m going raw bacon, and will try eggs with salted fresh pork belly. Also going to test some breakfast sausage. I went to a good/trusted butcher in the city and asked if he had products that contained organ meats. He offered up Scottish (style) Square Sausage. Meat (beef and lamb) and organ meats (liver, heart and kidneys), bound with eggs, some salt, pepper and herbs.

I can see @Fangs mouthing, “Uh-o” at the mention of herbs and spices. It does have a bit of a kick, I think there may be chilli in it.

Fasting blood glucose: 5.5mmol/l = 99mg/dl (interesting after OMAD), blood ketones = 0.5mmol/l

I fell asleep at 5 p.m. and am up at 1:00 a.m., which is a good length of sleep, but a few hours off correct and way off normal people’s schedule! I’d walk now, but I live in the desert, and rattlesnakes and scorpions are an issue at this time of the year. (interesting aside: I gave my telescope away through an astronomy club to a Native American kid, but he couldn’t accept it in the summer because his nation has a tradition/taboo against looking at the sky at night in the summer, and it must be at some level about avoiding getting bit by every venomous thing out there. Looking at the Crab Nebula is nice, but not nice enough to make up for a rattler bite!)

Yesterday, I had brunch of burger and someone else’s deviled eggs for supper, which were surely made with seed oil mayo, but also were something I didn’t have to cook. There was a free lunch set out in our community space, and it was 95% stuff I wouldn’t eat. I ate the leftover eggs from it. Second best choice was half-mini bell peppers stuffed with cream cheese, but I didn’t have those.

Today;s food will be eggs and bacon out for breakfast and then the last of the ground beef for supper. And shopping and the bank and other errands.

I lift light weights every day for just 10 minutes–alternating with body-weight exercises like squats and push-ups and sit-ups. and i walk. I’ve been a gym rat in the past, and my favorite physical thing I ever did was box in my 40s (which women weren’t allowed to do when I was young and matches my nature well). though I was just as happy to work the heavy bag as to spar, especially with men 20 years my junior who had six inches reach on me! What I should do that I haven’t added in lately is yoga or deep stretching. I feel better when I do it, but wow, it’s boring!

I do ok on most stuff that is in good fresh made sausage on herbs/spices but when ya say it has a little kick to it, then it gets more dicey for me. Anything on that hotter side, peppery, chili like or more just starts to burn a whole thru my tummy pretty fast. But if a more mild sausage I can woof that down and be ok. I hope you do well on that sausage, with that organ meat in there it seems like a really nice option to add if ya love it!! Plus if that is the butcher making and packaging that himself, you can ask for a small amt of it to be made less herby/spicey maybe? When he makes it put aside so many lbs for you and put it less spice?

I did that with our custom slaughterhouse. We took our hogs for harvesting and when I had sausage made I had him use different amts cause it was a biz to us and we sold it so many wanted heavy sage herb taste, many wanted very very mild on herbs and I always had him do some lbs for me with just a tad of herbs and no sugar added, and it was delish…so if you butcher can maybe take requests if you need it a bit different you might get lucky that way??

today is super simple. NY Strip steak and have some chicken I must cook today or lose it, so will just sautee that up and add some fresh homemade alfredo sauce and hoover it down.

All of the sudden it feels like July has stopped moving, lol. I went brain dead thru alot of this last month with alot of family med issues and more and overwhelmed on just stuff I was handling and it was like time didn’t exist. Now it seems to me like July has just stopped. Only the 15th of July and I feel like we should be well into August already? I don’t know HA
