Tonight was Tri-Tip roast sous vide at 135 F for 24 hours and riced cauliflower.
I use this as a base:
And saute onion and garlic in a liberal amount of butter. The key is getting all the water out of the cauliflower. I nuke it for 5 minutes then prepare a small colander lined with paper towels. Put the cooked cauliflower in it and cover with more paper towels. Use a bowl to press all the liquid out (in the sink).
You can’t get it too dry as you will be adding butter and cream later.
Add the dried cauliflower to the onion mixture, more butter if needed. Add a bit of cream and grated Parmesan cheese.

I forgot to sear it and too cold to grill it but was still delicious!

Not sure why but all week I’ve fancied a McDonald’s burger. I know I won’t be having one but the craving is stubbornly present. So today is DIY burger day. I’ll post pics at dinner time.
