I’m sitting down, eating a plate filled with some bacon, eggs fried in the bacon grease, a big ol’ slab of my homemade beef liver pate, an avocado and some brazil nuts.
I’m thinking “this is crazy” and I feel indescribably at peace looking at my plate. It’s my 1 year anniversary eating this way, and I (and everyone else who knows me) never would have thought I could come this far from where I was.
It scares me that just a few years ago I would only eat: garlic cheese bread, hotdogs (with a big fluffy white bun and a bunch of red HFCS, yum), kraft dinner, fettucini alfredo, noodle-based soup with the meat and veg removed, grilled cheese, chicken nuggets, poutine, margarine, crackers, corn chips, and low-fat milk (ew, I had terrible acne until I stopped drinking that [spoiler]shit[/spoiler])
I had terrible heartburn and puked randomly every single day throughout my entire life. I had gained so much weight and accumulated so many different problems from eating such a crappy diet all my life, I needed to take charge of it. At first, my goal was just to lose weight, but after being on keto for a bit and dropping the initial water weight (wasn’t aware it was water weight at the time), I was hooked.
From this point on, I noticed I was no longer vomiting and my heartburn had greatly improved. I had terrible acne on my face (everybody thought it was normal because I’m a teenager), and when I started keto it improved greatly. When I removed dairy my acne went away completely, as did my heartburn.
I went from a very crappy diet, over to a more whole foods ketogenic lifestyle by replacing the foods I used to eat with keto versions (and living off cheese for a while), and that is what helped me transition into keto. From there, I slowly stopped relying on the imitation foods and started eating more whole foods like meats, eggs, natural fats, nuts, vegetables, etc.
I’m happy to say that over the course of that year, I’ve lost 70+ lbs becoming a healthy weight, will now eat almost anything, feel better than ever, and am still slowly improving.
