Is this a keto friendly enough meal? Lol

I’ve mentioned it before but— I work at a Chinese buffet. This week is a 60 hour work week and I’m a server… I get about 3 hours active minutes of walking in according to my step tracker- every day… which is a lot for me. It’s like 14k steps.
I literally burn more calories when at work than I eat.

Anyways I got off topic!!!

Working so much this week- ice gotten sick of not being able to eat anything tasty. So I went next door and got a rotisserie chicken.

Is this a good enough meal for keto:
Chicken breast
Jalopeno jack cheese cubes
Almonds
Wasabi/soy sauce to dip the chicken (I don’t use much. Probably half a tsp soy sauce or less)

Sounds reasonably low in carbs, as long as you don’t over do on the almonds.

But it also seems low in fat. If you can get any parts of the rotisserie chicken, get the thigh and/leg meat and get the delicious skin.

Oh I totally ate the skin. But I hate dark meat :frowning: that’s why I added the cheese. :frowning:

If you swap out the wasabi/soy sauce for a wasabi mayo, that would be even better. I won’t hold it against you for not liking dark meat. My wife doesn’t either, and I’ve never tried to change her mind because it just means more for me😁

This leads me to another question…
Mayo:
I’ve heard ppl say avocado oil mayo… what’s the difference between that and regular mayo?

Again - 2 1/2 months in. Lost lots of weight and feel amazing everyday (when I’m not sick I mean lol) but I don’t kniw these things. Very very basic keto here!! We use regular mayo. Regular butter. The only things we really buy special is zevia (the only way my man has been able to stick with this) almond flour and flax meal type things.
Again we must b doing something right because progress is still happening. So why is it so important to have the fancy mayo and fancy butter ?

The kerrigold butter isn’t necessary. I think it tastes better, but I also still use regular butter.

On the mayo, it’s best to find some made wirh avocado oil or olive oil because “regular” mayo is usually made with oils that aren’t great.

It’s my understanding that butter from grass-fed cows has more omega 3 fatty acid and less omega 6 (which is associated with inflammation). Also true for some of the highly processed oils commonly used in commercial mayo.

Use Chosen Foods Avocado Mayo
Or Primal Kitchen. They both use great ingredients. The other so called Avocado Mayo’s still have Canola or Soy oil.

:chicken:Oh my goodness. I got a rotisserie chicken once and it smelled so good in my car that and grabbed it from the back seat. I ended up eating it like I was a feral animal. Needless to say, that chicken didn’t make it home. :chicken:
