Splash a little lemon juice in some heavy whipping cream. Theoretically you have to leave it on the counter overnight, but if you haven’t planned ahead it works pretty well right away. This way you can make only the sour cream you need without wasting any.

Sour cream on top please! I tried mixing it with the eggs years ago after watching the Sopranos episode where James Gandolfino kills Joe Pantoliano with an cast iron skillet after he’ scrambled eggs with sour cream :wink:.
