I miss pasta

Pesto cavatappi, spaghetti, fettuccini alfredo, asiago tortalini, pasta salads, chicken noodle soup. You get the idea.

I’m a month in and am doing good. Down 10lbs. Have a good variety of foods to eat. Have no problem staying under 20 net carbs. I don’t think I’m fat-adjusted yet, but still doing good.

The one thing I really miss is pasta. Are there any good substitutes out there? Store-bought or easy to make (think chaffles)?

Have you looked into Carl Franklin’s bzoodle recipe? I had some at Ketofest a few years ago, and it tasted just like pasta.

It may not help you but eggs are superior to pasta if you ask me. Eggless pasta is tasteless anyway but a proper eggy pasta get its charm mostly from eggs too… And the shape. It’s sad I can’t have macaroni shaped eggs - but it’s so very easy to live without that too.
Sometimes I fancy some poppy seed pasta, I use eggs with poppy seeds and just make crumbles from it (I tear it apart while frying). Way simpler than bothering with cooking pasta and of course, tastier too as I don’t dilute it with flour and added water, it’s pure flavor.
(And it’s very off food to me as I try to do carnivore. Apage satanas! But it’s a tasty dessert ;))

There are other substitutions, some people use cucchini (???), others konjac pasta (tasteless and feels like nothing to me, it doesn’t worth anything to me) and surely there are many others. There is pasta made with oily seed flours… I dislike most oily seed flours so I rather just use eggs, really… And some tasty oily seed if I must. Fibers dilute the flavor, again…

I’m a fan of seakelp noodles but you must cook them with a fat source/small amount of sauce to get noodles to soften. I also haven’t had real pasta in about 4 years….so take my opinion with a grain of salt lolol

As far as I can tell you can’t buy these. I have plenty of leftover transglutiwhatever from my attempts. I wasted more than a few eggs before I figured out how to do these (using my crepe maker) and coming up with what were fully acceptable pasta substitutes as long as you use something other than tomato sauce. but it is WAY toomuch trouble.

Im guessing that may be why these are not for sale everywhere. They are the best substitute I have found

I have heard some people find shirataki/konjac noodles to be OK. I haven’t personally tried them since I have fortunately managed to escape from the pasta cravings.

That may be my best bet. Trying to hold off in hopes of escaping the cravings.

Try Palmini pasta. It’s rather tasteless. It’s made out of palm trees. It has kind of a vegetable bite but you get you used to it. It comes in either can or foil pouch. I usually get it in a can. And I rinse and drain it in the can and then I cut it a bit with a scissors while it’s in the can. I just put it in a bowl, add the sauce, cover & microwave. It just needs to heat up and get hot. Pair it with a great sauce and cheese. It’s the best substitute for pasta I’ve found. Their rice is good too. Bon apetite!

If you like meat sauce, we’ve made meat sauce and just eaten it. Sausage + ground meat + low carb spag sauce (I like to add an anchovy or two plus kalamata olives, but that’s me) + pecorino romano.

I’ve tried some of the pasta substitutes, but I haven’t found any I’ve liked. And honestly don’t miss pasta any more. (Took a while, though.)

I really expected to miss pasta (I loved making my own) and potatoes (I was obsessed with them). But it just hasn’t happened.

I’m generally uninclined to find ‘stand ins’ for foods I’ve cut out though and have always been that way. When I was vegan for 4 years (yeah… I know…) I never bought meat and cheese substitutes but made sure I understood nutrition well enough to cook and eat totally different food to meet my needs,

when low carb I ate Miracle Noodles. Lost alot of weight eating those things but never really enjoyed them at all. but they ‘fit some mind’ game for me ya know and in the end I didn’t fair well playing that game as it was for me.

I miss potatoes. omg I can eat tons and tons of them but never ever found any replacement for them so at that point, I said gonzo and moved on.

Hope ya find a way to work thru what you lost. Grieving loss of ol’ foods we ate is very hard, I had to tackle it literally as a real deal item in my life as I changed my eating lifestyle for my better health in life. Yea, darn hard!! well it was for me :slight_smile:

Now, carni noodles I could handle but by the time I learned of this I was over that I required no ‘pasta wanna-be’ in my journey. Not a fan of pasta but taters…omgosh LOL

Google up Keto pasta noodles youtube. SO MANY options come into play you can make that fit your Keto Plan. Making Keto noodles is ALL out there on youtube for sure :slight_smile:

I was a big potato eater but when I stopped eating them (except when they were in moderation in some veggie dish), I didn’t miss them for 5 years… And then it just wasn’t the same anymore. I still eat some here and there because I can’t always ignore 2 kg boiled one in the kitchen for 4 days… But it’s very rare and very little.

I didn’t miss pasta for even longer (and had great substitute, egg + some paleo flour, fried, crumbled) but now I do miss the macaroni shape. It’s fun. One can slurp up soup and sauce with it :smiley: But properly eggy macaroni doesn’t exist and I can’t make them either. And the shorter pipe isn’t the same. So, my eggs still win. I could just eat normal pasta if I sooo wanted (I tried that a few times) - but it’s NOT GOOD. It has flour flavor, ew. And not enough egg.
I expect great flavor from my pasta. If it’s not delicious all alone, it’s not good enough for me.

I am all for good substitutions, I had great success with some :slight_smile: And it was clear it’s impossible for others (anything with their own unique flavor).
Sometimes I only need something to work in the role, different is fine.

I never grieved items, I think, I am lucky. If I want something, I eat it BUT if it’s unhealthy, I already lost most of my interest and I can train the rest out of myself while eating good, healthy food that is just the tastiest :wink:
If I miss something, that’s some specific texture. Like wafers. I can’t make them but what I can buy has bad ingredients so I just go and make some other crispy stuff… One can live without wafers, right? :smiley: Crispy, crunchy options should be enough.

me too and in the end, dump LOL but darn if they didn’t help my way forward but I also hated eating the darn things :slight_smile:

OH HOW we compromise thru what we need as we move forward I guess.
