I miss bread

No, no, I don’t miss bread in and of itself. Or even rice or potatoes. Five months in I don’t crave those things at all (what?!). What I do miss is the functionality of bread and rolls. The vehicle. Lettuce wraps don’t always contain a burger the same way (unless you get a true lettuce artist that can swaddle that burger like a newborn). And using a fork and knife can get a bit tiresome. A burden worth while of course. :wink:

I like to use slices of ham as my “bread” when having a burger or hot dog. Weird, maybe. Tasty, absolutely. :smile:

I was just thinking how I miss bagels, not for bagels, but for spreading an inch of cream cheese on them.

I use turkey :slight_smile:

I find that ‘bread’ makes things so much easier… of course, it needs to be keto so this recipe works really well and is very easy.

Here’s what I use! Took these bad boys out to my husband’s favorite burger restaurant on Father’s Day.

Fat Head Dough for Sandwich Rolls

1 1/2 cups shredded mozzarella
¾ cup almond flour
2 tbs cream cheese
1 egg
¾ tablespoon baking powder

Instructions:

-put mozzarella and cream cheese in a medium size microwaveable bowl

-Microwave for 1 min, stir and then another 30 sec, stir (very hot!)

Mix almond flour with baking powder

Crack egg in a bowl and put the almond flour mixture directly on top and then add the melted cheese (I don’t directly put the melted cheese on the egg as to not accidentally start cooking the egg!)

I use my Kitchen Aid Mixer with the dough hook so typically will make a double batch. Make sure that the mix is even – if you use a dough hook the cheese may start creeping up the hook. Just stop the mixer and use a spoon to push back down.

Chill the dough for 30 minutes to an hour. Divide into 3 and form into sandwich rolls. Place on parchment paper lined cookie sheet.

Bake for about 14 to 16 minutes in a preheated 425 F oven.

Let cool and then slice in half

I might have to just go ahead and do this just to get some variety. I’m falling into a rut as well as.

I did make Fat Head dough once when I first started. It was pretty good. I just have not since then because I tend to seek out the lowest of the low where carbs are concerned, so no bun is better than even a keto one.

But a combo of meal repetition/boredom and wistful thoughts about a “carrier vehicle” could become sabotage if not careful.

I have fallen victim to this, myself. Carrier vehicle is a great way to put it, just because I do find myself wanting this. I ended up making daily breakfast sandwiches on cheesy keto bread, which doesn’t contain any nut flours, so the carb count is rather low. But it also doesn’t have nearly the bread-like consistancy as the fathead stuff, but if it’s about the vehicle and the low carb count, cheesy keto bread is a good choice. Its just shreddrd mozzarella cheese and egg as a binder, baked in the oven. You can make them into pizzas or dipping sticks or whatever. But they make a great vehicle.

I pretty much do the knife and fork with everything anyway, even when there is a keto bun. Don’t have good choppers to take a bite so it’s just the way I roll.

For a burger, I start with a couple of thick slices of cheese, a little mustard, then the burger, a little ketchup, a little onion, some tomato, a little mayo and then a little pickle / dill relish on top. The bun would just be in the way. :yum:

I find that if we keep it to a weekly or every other week indulgence I still lose. Better to have a slightly lower rate of loss and be able to do this long term than to throw in the towel because of dietary tedium. Somebody told me about “The Bright Line” diet as I was cutting out sugar back in March of 2018. I checked it out and listened to the founder and decided a) she was bordering on manic, and b) she had created a diet plan that might work in the short run but because of her insistence that you NEVER EVER cross the line - and she insisted on no nut flours as part of the no flour rule, made me think that would be too difficult to sustain. Apparently she has a PhD in psychology. However, it hit me that she didn’t really understand they way human brains work.

I like lettuce wraps, my technique is to take a whole head of iceberg, cut it in half through the core, cut the core out, and take a half and remove the center leaving a thick lettuce bowl between 1/4-1/2” thick. Put your burger in the lettuce bowl with your additional stuff. I stopped putting mayo of mustard inside because it gets watery and messy. Then I add a thick layered smaller lettuce bowl on top. Mayo/mustard mix on the side putting a spoonful where I am biting next. Works really well for me. :cowboy_hat_face:

I do get it. Sometime you just want something to get the cheese and butter from the plate to your mouth!
In the beginning I used to make flaxseed foccacia and seed crackers. These days I request celery with a cheeseboard and spread butter on the cheese - yesssss- even in a restaurant! When guests come to me I just nibble some cheese!
Burgers? Don’t be so bloody lazy, get a knife and fork🤣

My easiest sandwich is simply a cheesewich – meat (and whatever) between two slices of cheese. My go-to is two slices of Canadian Bacon on a slice of pepper jack cheese. Just fold over and eat.

Otherwise, what I use for bread depends on use and convenience:

I’ve tried both the ThinSlim and Great Low Carb Bread Company baked items. They’re OK, but expensive and filled with a lot of fiber. I always feel bloated and uncomfortable afterwards.

Sounds like much more than a vehicle. Does anyone roll back and discard the bread as it delivers the goods to the mouth? Didn’t think so.

Before keto, I used to be able to go weeks at a time without using a fork or knife. I kind of like that keto has taught me better table manners.

All well and good, but I travel to France. I miss bread when I smell it as I walk by or see those amazing flaky delicacies on the buffet. Sigh.
