I love putting in fatty pork cuts for lazy fast pulled pork. It takes 45 minutes in mine. Green beans with bacon fat is yummy too!

Yay!
I started off with boiling eggs.

Today I am going to cook a whole chicken in the IP. I was hesitant to do that since I like the crispy skin of oven roasting, but I was surprised at how delicious the skin/fat is in the pressure cooker! I’ve cooked a few whole chickens in it, the first time I removed the cooked chicken and placed it under the broiler. The next time I must have cooked it a little longer, since a wing fell off as I lifted the chicken from the IP.
I don’t bother with the broiling any more.

Enjoy your pressure cooker!

So re you saying it’s crispy or that you don’t mind that it’s not?

It’s definitely not crispy, but so fatty and delicious!

O.K., I cooked my chicken and it was very good. But, I remembered my one complaint so far with Instant Pot. It is apparently aimed at fat phobic folks. I don’t like that the bottom of the pot is tapered to the sides. When fat is added (today I used ghee to saute the chicken before pressure cooking), the fat runs to the outer edge like a moat…and the skin sticks. arrghhh
