For low acid and low sugar you MUST use a pressure canner or you could end up with botulism.
Most people stick with fruit and pickles because they can use a cheap water bath canner (huge pot) and as long as the lids suck in when they cool off your food is safe.
Green beans, squash and meat you must pressure can. I did some but is a lot of effort, but will survive an extended power outage. Easier to blanch the veggies and throw in a ziplock baggies and freeze.
You could keep them in a bucket of cold water for a bit longer if no refrigeration. Don’t know timings. Sorry.
Canned vienna sausages (plain, chicken, or smoked flavor only) , Armour potted meat, ready to eat bacon, Underwood deviled ham . I hope you are ok.

If you buy unwashed eggs you can keep them unrefrigerated. Washing them removes the protective barrier thus requiring them to be refrigerated. I like the Chomps meat sticks from Trader Joes. I really like this homemade granola (I use almond butter in place of the peanut butter). Well, we buy our eggs at Walmart. We go through eggs pretty fast. My stepdaughter bought two carts worth of food one day. The 60 pack box of eggs got lost under the seat in her truck, and unnoticed for a week when I found them. I expected them to be bad. I fried up a few. There were fine.
I lived in England for four years. I remembered all my English friends keeping their eggs on their kitchen counter. So seeing as they spent a week in very warm conditions in a vehicle for a week, either they were bad now, or will last a bit longer. I left them on the kitchen counter as to not mix them up with the “fresh” eggs that she went and bought, and remembered to bring in.
I ate all 5 dozen in about two weeks time. They sat on the counter the entire time never going into the fridge. Total room temp time being about 3 weeks.
Yeah, because they don’t wash the protective layer off, as mandated in the US.

Good luck! I’m 2 hours from The coast in SC. This latest track may get ugly. We have enough salami and peanut butter to last a week! Batten down the hatches!!
So when eggs pop out of a chicken’s butt they have a protective layer over them that blocks bacteria. If you get fresh eggs from a farmer who knows what they’re doing the eggs should be entirely unwashed. You can make a diluted vinegar water mixture and gently pat the eggs if they have a little bit of barn yard filth on them but eat any of those eggs you clean first. All other eggs you don’t need to wash they should be totally fine for literally weeks sitting out on the counter. I get all of my eggs fresh and literally never refrigerate them. I buy 3-6 doz at a time and they do sit out for weeks.
Eggs are refrigerated in America because the eggs you get in stores go through a cleaning process that removes the egg’s natural protections and shortens their shelf life. They are still probably ok un-refrigerated for a few days but they have a much shorter shelf life then natural eggs. When I buy store eggs occasionally I usually don’t refrigerate them either but I eat them much faster.

Yeah, it has adjusted away from us and towards you all big time. Hopefully you’re more towards the southern part of SC.
