I am 5 weeks in. I usually eat dinner between 6p and 7pm. I do not eat breakfast and “fast” until lunch at 1130am on work days. I have a handful of nuts around 2pm or a boiled egg for a snack. Otherwise Im starving and will be tempted before dinner. Does this count as “fasting” or do I have to go like 24hrs without food?
How much/ how long to count as fasting?

Time restricted eating is IF - intermittent fasting and can have benefits
Only thing i would suggest from your description is to grow that afternoon snack into a full blown meal. General advice on keto is - if you’re going to have an insulin response from eating, why not make it count and eat till full - satiated even? Especially at this early stage of your new keto life

Either what @Rajseth said or eat a larger lunch at 11:30 with more fat so you can make it all the way to dinner.
Or start to slowly push back your first meal by 30 minute increments until you can get to the second meal without snacking.
