Based on the ingredients, I don’t see how this is 20 carbs. What am I missing?
How is this 20 carbs?
Can’t be right. It would have 80 calories if it had 20g carbs and those ingredients don’t add up to 80 cal or 20 carbs either.
They haven’t listed the non sugar sweeteners, which my mind automatically deletes from carbs (thanks Atkins).

Erythritol is full carb but its net carb content is extremely low.
I don’t know about monk fruit.
Erythritol counts for zero carbs because it is not absorbed. This does cause some people to have intestinal distress. I use it without side effects.
Recent changes in US food labeling laws requires listing sugar alcohols as carbohydrates. It really pisses me off and I think BIG SUGAR and GRAIN $$$$ was behind the push. It just makes it a little more confusing because sugar alcohol and starch are not required to be listed in the carb breakdown. You might notice that when sugar is subtracted from net carbs sometimes there’s unaccounted for carbs. That was starch. Now you have to guess whether the unaccounted for carbs are starch (digestible) or sugar alcohol (indigestible). Pretty sure this was an attempt to muddy the situation for people attempting low carb since it’s upping the carb count for products aimed at people avoiding sugar and starch.
