High Fat Grilling Cook out Meal Ideas

I have a big family vacation planned this summer. 12 people will be staying in a big cabin and to help keep costs low, we designated groups of people to provide dinner on specific days of the week.

Id like to make a really delicious keto meal for everyone! We will have a grill, so thats definitely something we will use. I was thinking of some sort of meat with veggies and a creamy aioli!!

Does anyone have suggestions for a HIGH FAT grilling ideas? Its easy to go low carb on vacation, but hard to go high fat.

Thick cut pork spare ribs.
Marinate in whatever your prefered spices/rub/sauce etc is, then wrap in tinfoil on a large roasting dish (you dont have to line with tinfoil but clean ups a **** ) and set oven to about 160-170 f . Leave to slow cook all day fire up your bbq etc when ready & transfer to grill to finish cooking about 20-40 minutes before you want to eat. Falls off the bone tender with all the flavour and you dont loose all the fat to a grease fire that burns the outside & leaves it raw inside.
Make sure to keep some distance from the charcol, you just want to get that crispy bbq finish, no need to “cook it”

You can also cook down whats left in the tin foil to glaze it on the bbq (spices, juices, fat)

Sides are coleslaw (cream cheese and cream freshe used instead of mayo. Add lemon/vinegar, herbs/spices etc to taste) and rainbow chard fried in whatever fatty substance strikes your fancy (the fat left in the tray from the spare ribs works nicely, add bacon and pine nuts if you feel like it)

What spice/rub/marinade did you use in the picture?

Im one of those people who tend to just throw things together, exspecially spice mixes and then cant remember what I did later.
This is what I do remember but im probably forgetting a few things.

Salt
Pepper
Chopped garlic
chipotle chili flakes
Ancho grande chili flakes
Mulato chili flakes
Lime juice
Smoked paprika
Olive oil

Mixed all together, rubbed into the pork ribs and left to marinate for 24 hours before popping in the oven on low
