Hey new and looking to make some homemade alternatives

hey I’ve just recently went low carb and was looking to make healthier versions of my favourite things…

Starting off with Mayonnaise… I bought an electric hand blender one with the balloon like attachments, all the ingredients and a silver metallic mixing bowl.

I am now onto my third attempt to get it to emulsify and having no luck… went through a ton of eggs and ingredients :frowning:

I have all the correct measurements and I place the whisk at the lowest point of the bowl and pulse it… unfortunately the blender doesn’t have a pulse function so I just quickly flick it on and off… my only other method would be my smoothie blender… however its the type that you add the ingredients into the sports drink bottle attach the lid and turn upside down… so the ingredients would be upside down and by time I turn right way up would most likely mix together… or would the egg move naturally to the bottom and oil back to the top…

Arghhhh first attempt at homemade stuff so far unsuccessful… any tips ?

Best tip for homemade Mayo is to blend it in a container that is just wide enough for the head of the stick mixer.

Also, don’t use the whisk, use the blender attachment instead. Add the oil gradually while blending, slowly at first.

If you have a food processor, that is the easiest method to do mayo. Using the small removable top on the top of the bowl very slowly Add the oil. The beginning like a teaspoon at a time add the oil then (while the processor is running) then slowly increase the oil until pouring it in a slow continuous stream only slowing or stopping if you see that the oil is not being absorbed. It is hard to get right. If no food processor then using your new blender repeat the process above it is a little harder but going slow in the beginning is key. Good luck.

What do you use the mayo for? I cant think of anything besides sandwiches which is not keto due to the bread–?--or will you put it on salad?

I use it all the time as a side, often spicy mayo. goes well with grilled fish and veggies. or my fave easy snack: roll up of a slice of (good quality) cheese with a dash of mayo. It’s also a main ingredient in a tuna casserole i make.

mayo for me is a keto necessary accessory

I use it to dip my bunless burgers in, to make tuna salad, etc.

Add to sour cream to make Homemade dressings, use it to get pork rind “breadcrumbs” to stick to chicken, top a burger, deviled eggs, top a spoon. Tons of ways to use good mayo.
