Help me brainstorm on a busy work day?

Hello friends!

In a continued effort to break a seemingly never ending stall, I would like to start moving my eating window to the morning. I am hoping to have one large meal for breakfast, and then something smaller and quick at lunch. I am a teacher, so I need to have something in the mornings that is relatively quick to make, and something for lunch that is also quick to eat (we aren’t kidding when we say we have about 15 real mins to eat :joy:)

I know there are some obvious ones, but I was curious who else out there does a morning eating window on a tight schedule, and what foods are most successful.

I have switched up my eating window too and I’m really loving it! Besides the usual eggs n bacon/omelettes, I’ve been bringing burgers, carlshead pizza and leftovers. No one ever said breakfast had to be “breakfast” foods, right? :blush:

Oh and I’m thinking of making a bunch of scotch eggs this weekend, and some egg muffins. Those seem like they’ll be nice and easy to take to work.

You could try pre-making some foods on the weekend. I sometimes like to make a Keto quiche. We heat it in the microwave. Also, you could pre-bake a whole bunch of bacon and/or Keto pancakes. I bet the pancakes could be frozen.

I keep sardines, pork rinds and 85% dark chocolate in my desk for those days I forgot lunch. I also roll up Italian salamis, etc and cheese for the week and store in snack size baggies. Of course boiling a dozen eggs and stocking my desk with individual serving size mayo is a steady go to. I am going to make up a batch of Brenda’s pork rind waffles to freeze and reheat with turkey (not lean) sausage pattys, I season and batch cook.
