Heavy cream vs. Light Cream

Hi Guys! you are all awesome! Thank you for your support!

So, been using light cream in coffee… (when not doing bulletproof ) – have heavy cream but it always seems to curdle in coffee…

What do you use? Is it bad to use light cream?

Thoughts, comments opinions welcome!

Light cream? Just regular whipping cream vs HWC or an actual lower fat cream? If regular whipping cream, that’s fine just that more fat is better. If it’s a low(er) fat cream, replace with some higher fat cream.

My advice is to find quality heavy cream that doesn’t have a bunch of junk in it. It costs more but it goes further and tastes better. Look at the label on the cream at your regular grocery store, so many additives that don’t need to be there. They use carrageenan to thicken the cheap crap to hide the fact that the quality isn’t there. The quality cream I get at Whole Foods is yellow not white, kinda like the difference between cheap butter and Kerrygold.

Put a splash of cold water in to slightly cool the coffee before adding heavy cream to it, that will stop the curdling.

“Bad” to use light cream?

Not in my experience. We only use it when we get coffee at Wawa. They don’t stock HWC in their selection so we use light cream, it has less fat that HWC but still does the job.

Otherwise, we use HWC from wal-mart. I know it’s not the highest quality thing in the market BUT, our diet is very efficient as it stands, having a slightly lower quality HWC isn’t going to make that much of a difference (in our situation, your results may certainly vary).

I think the key thing is, can you afford the “good stuff”? Do you have access to it? Does only using the “good stuff” put you in a financial bind, require you to drive 30 minutes to only buy that one thing, raise your stress level just getting a hold of it? If so, don’t sweat it, use what’s available and within reason and keto on!

The efficiency and effectiveness “return” from dialing in such a minor change is probably not worth sweating over, remember the 80/20 rule. 80% of your gains will most likely come from 20% of your effort, is LWC vs HWC part of the 20% for you?

Another useful thing is a milk frother. Even if it curdles, a quick zap with a frother will fix it :grin:

Light cream is just SLIGHTLY more cream than milk. Think of it as one step up from half n half. Really should go with heavy cream. Curdle? Or kinda leave tracks? HC can do that, as long as you know its good and your coffee isn’t boiling I wouldn’t worry about it.

Light cream is whats in between half n half and heavy cream.

Is “light cream” different than “whipping cream”? I put HWC in as much stuff as I can. I bought “whipping cream” once on accident and it was just slightly less fat and calories than HWC so I doubled my doses. No wonder it was cheaper. I pay a little closer attention now.

Yes. Light cream is heavier than half n half and lighter than heavy. Heavy Cream and Heavy “Whipping” Cream are the same thing essentially, but the “whipping” stuff typically has stabilizers in it to hold peaks and keep if from reverting on you after you whip it.

Pretty much goes like this

Milk
Half n Half
Light Cream
Whipping Cream
Heavy Cream / HWC

Some brands combine Heavy/Whipping into the same label which at that point means you gotta look at the ingredients to tell.

I could have googled it but I was being lazy. Looks like half and half is 12% fat, light cream is 20% fat, whipping cream is 35%, and HWC is 38%. Sounds about right when I think back on the whipping cream I had accidentally bought. Whipping cream would still be a lot better than light cream. I’ve had some great organic HWC that tasted like butter. Couldn’t justify the cost for what I use it for, so now I just buy the biggest jug at Kroger. Which tastes pretty good, but not quite like butter.

Wife uses HWC on her “fat fast” days, she loves it.

We both use HWC in our “fruit treat.” The “fruit treat” is a serving of fresh blackberries for me, fresh raspberries for her, with HWC and optional Splenda. As the name implies, it’s a “treat.”

No, half and half is more milk than cream, Use heavy whenever possible.

The store manager told me once that not out of date hwc can sometimes be lumpy due to the shaking it gets in shipping sometimes

I think your coffee may be too hot. I get the Land-O-Lakes Heavy Cream. 0 Carbs. When I first add the cream to the coffee it sorta looks messed up, but that’s ok, some food scientist doesn’t have his/her nasty hand in there adding additives to stop that from happening. Just stir the coffee and enjoy!
